JOB SUMMARY:

This is an exciting opportunity for an energetic, entrepreneurial Culinary professional who is constantly seeking a better way to conduct business and willing to learn the exciting world of healthcare.

  • The Traveling Sous Chef will assist in new healthcare account openings across a specific geographic region of the US and will be a 100% traveling position.

  • You will help to organize and prepare the cooking of daily menu items for both patient and retail menus adhering to all brand standards.

  • You may be responsible for supervising hourly kitchen employees and assisting with employee training and scheduling of hourly staff.

  • You will work with the Executive Chef or Chef in placing, receiving and storing products and become knowledgeable in the use of MyOrders (online purchasing platform).

  • The Traveling Sous Chef will report directly to the Senior Corporate Executive Chef and work closely with the Corporate Executive Chef team in providing culinary solutions for regional needs.

  • During this role the Traveling Sous Chef will train on various programs and systems used by Morrison Healthcare to support our client and business needs including but not limited to The Power of Food Excellence Playbooks, MyOrders, Webtrition (recipe & production system), eMorrison, and MyCompass.

  • After a rotation of 3-6 months, the ideal candidate would either be placed into a full time role or entered in our world-class Manager In Training (MIT) program to further learn and grow their skills and be placed into a permanent role upon successful completion of the MIT program.

PREFERRED QUALIFICATIONS:

  • A.O.S. Degree in Culinary Arts or culinary certificate and required 1 year+ minimum experience

  • Some progressive culinary/kitchen management experience, depending upon formal degree or training

  • Catering experience a plus

  • High volume, complex foodservice operations experience - highly desirable

  • Institutional and batch cooking experiences helpful

  • Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation

  • Must be experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet

  • Must be willing to participate in patient satisfaction programs/activities

  • ServSafe certified - highly desirable

Understand end to end supply chain and procurement process and systems, ensure only authorized suppliers are used. Full knowledge and implementation of the Food Framework. Ensure accuracy of estimated food consumption for appropriate requisitions and/or food purchase. Ensure proper equipment operation and maintenance. * Compliance: Ensure compliance with Aramark SAFE food, occupational and environmental safety polices in all culinary and kitchen operations.
