Five years school cafeteria management experience
Technology Proficiency Level 1 - Basic (use of):

Job-related student and/or financial management system

Experience:
Required:
Three years' cafeteria manager experience in CCISD Food Services Department.
Experience working with customer service.
Knowledge of cooking, temperature techniques, procedures, and how food should look and taste.
Knowledge of how to use standard commercial kitchen equipment and Point of Sales system, computer, and calculator.

Able to understand all cafeteria operations and teach that knowledge to manager trainees.
Supervise and evaluate cafeteria helpers, manager trainees and managers; counsel; promote employee growth, efficiency, morale, and teamwork.
Able to organize work to meet meal service deadlines.
Maintain emotional control under stress.
Able to communicate effectively in oral and written forms with students, principals, teachers, parents, and food service personnel.
FUNCTION:
Under the supervision of the Field Supervisor for Food Services, is responsible for training Manager Trainees to become cafeteria managers. In addition, is responsible for the entire cafeteria operation, including assembly, heating and service of food, employee training and supervision, sanitation, record control, ordering supplies, and cashiering.
MAJOR RESPONSIBILITIES & REQUIREMENTS:
Train prospective managers to function as helpers in every area of the kitchen and to perform all duties of the cafeteria manager.
Train prospective managers to maintain all records as required by CCISD and the Texas Department of Agriculture.
Responsible for maintaining individual trainee folders documenting the learning of tasks.
As requested by the Office of Food Services, schedules trainees to substitute for absent managers.
Responsible for following the Departments standardized recipes in all aspects of food preparation and serving.
Works with employees on proper work methods and procedures daily.
Evaluate daily menu and make suggestions for changes.
Train Manager Trainees on required USDA/TOA rules/regulations regarding meal service.
Responsible for maintaining accurate timekeeping records for yourself and staff and training manager trainees on proper payroll procedures.
Cashier and/or help replenish food daily during serving periods.
Prepare or check for accuracy all daily reports, records, and deposits.
Responsible for checking food received matches Food Production Record.
Responsible for ordering supplies and equipment based on inventory levels set by the Field Supervisor for Food Services.
Ensures that all money collected is properly deposited and secured on a daily basis.
Ensures all food received is properly accounted for as sold, leftover, or returned to Central Kitchen when appropriate.
Responsible for the final daily cleaning of kitchen and dining room.
Responsible for the proper closing and securing of the cafeteria at the end of the day.
Occasional prolonged or irregular hours, lift or carry 1 to 40 lbs. frequently, 41-60 lbs. occasionally with assistance and proper lifting techniques.
Bend, stoop and reach above shoulder level occasionally and work with machinery frequently.
Climb ladders, stairs, and ramps occasionally;
Walk and stand frequently, sit occasionally.
Drive occasionally.
