Yellowtail Japanese Restaurant & Lounge is seeking a skilled Sushi Cook to join our dynamic team. Our restaurant offers a fusion of traditional and contemporary Japanese cuisine with a touch of Korean influence, curated by Michelin Star award-winning Chef Akira Back. From seasonal fish flown in daily to meticulously prepared Wagyu beef, our menu promises an exquisite dining experience. Nestled amidst the iconic Bellagio Fountains, our restaurant boasts panoramic views and an elegant ambiance, accentuated by a stunning bronze installation of a yellowtail fish at the entrance. THE JOB:

As a Sushi Cook, you will be responsible preparing sushi and other Japanese dishes. You will also set the stage for guest experience with your welcoming smile and service. By understanding their unique stories and needs, you will own their experience to create WOW memories they will carry with them far and beyond their stay with us.

THE STARTING RATE: $24.9379

THE DAY-TO-DAY:

  • Demonstrate proficient knife techniques essential for crafting sushi and other Japanese cuisine.

  • Uphold comprehensive menu knowledge and meticulous attention to plating aesthetics.

  • Uphold superior food quality standards and rectify any deviations promptly.

  • Perform regular inventory checks on designated food items, ensuring appropriate par levels.

  • Maintain and ensure the proper functionality, cleanliness, and sanitation of kitchen equipment and assigned workspaces.

  • Adhere strictly to Chef's recipes and instructions.

  • Communicate promptly with Room Chef or Sous Chef regarding encountered challenges and their resolutions.

  • Support pantry and prep areas as needed.

THE IDEAL CANDIDATE:

  • Previous sushi experience, preferably in a high-end or upscale setting.

  • Demonstrated experience in fine dining establishments, showcasing an understanding of elevated culinary techniques and presentation.

  • Comfortable working in a high-volume environment, maintaining efficiency without sacrificing quality.

  • Exceptional attention to detail, ensuring precise execution of sushi rolls and plate presentation.

  • Passionate about cooking and sushi, with a deep appreciation for the artistry and tradition of Japanese cuisine.

MINIMUM REQUIREMENTS:

  • High school diploma or equivalent.

  • One (1) year sushi experience.

  • Hours of operation:

  • Monday

  • Thursday, Sunday Open from 5pm

  • 10pm

  • Friday
  • Saturday Open from 5pm

  • 11pm

  • Lounge Open from 5pm
  • 12am
  • Live Entertainment/DJ from 830pm
  • 1230am
  • (May work before/after these times for opening and closing procedures)
