Assists Executive Chef with oversight of Food Production for the Kaweah Health.

License /Certification Required:ServSafe Food Protection Manager Certification within six months of hire/transfer. Preferred:N/A Education Required:N/A Preferred:Associate's degree in Culinary Arts or related field.

Testing N/A Experience Required:Minimum of three years experience in a restaurant or commercial kitchen. Preferred:Two years supervisory experience in a restaurant or commercial kitchen. Knowledge/Skills/Abilities N/A Department Specific Requirements N/A Essential Assists in the day to day direction of Kitchen and Cafeteria Staff, including time management of food production and kitchen sanitation.

Ensures staff is in place; working on the assigned tasks. Ensures that the staff takes appropriate breaks at proper times, and works throughout entire shift up to punching out. Checks phone messages for call offs and ensures adequate staffing for shift and/or day.

Makes decisions and prioritizes department resources to accommodate customer demands. Communicates with next shift Lead to effectively pass along pertinent information. Checks e-mail for communications for the previous Lead.

Signs off on end-of-shift closing/cleaning lists for kitchen employees, ensuring that employees maintain and leave a clean environment for the next shift. Responds appropriately to employee work-related injuries. Verifies the balance of the department safe at the beginning of each day's shift and at shift change.

Assigns cash drawers throughout the day and ensures all cash register re-sets are completed appropriately. Checks for catering add-ons at the beginning of each day.

Monitors all refrigerators and freezers to ensure all food items are properly covered, labeled, and dated.

Monitors Kaweah Kids order and ensures timely delivery. Monitors HACCP Log for accuracy and completion. Takes appropriate action when any step is missing, incomplete, or out of compliance.

Assembles and delivers Kaweah Korner order. Retrieves stock from Creekside storage. Assists in overseeing in the cafeteria at lunch as needed.

Creates production staff schedules and create training topics for the production and dishroom sanitation team. Assists Executive Chef in planning retail menus and reviewing temperature log. Assists in preparation of Food Production Sheets and ensure proper completion.

Enforces nutrition and sanitation standards in the department. Assists Executive Chef in adherence to regulatory sanitation standards including HACCP. Assists in monitoring compliance to current policies and procedures concerning food procurement, preparation and service which reflect compliance with Kaweah Health and regulatory guidelines.

Communicates purchasing needs to clerk. Assists Executive Chef with preparation of special functions and catering. Assists with patients and customer service recovery.

Assists Executive Chef with achievement of budget. Assists Executive Chef with Program Changes and implementation. Addendum (essential for specific dept) Additional Demonstrates the knowledge and skills necessary to provide care and services appropriate to the population served on the assigned unit or work area. Performs other duties as assigned.
