Location: We are seeking an experienced Sous Chef l for the for the New Orleans Convention Center.

Principal Function

The sous chef works closely with the head chef to ensure the smooth operation of the kitchen and the delivery of high-quality food to customers. They are responsible for managing the kitchen staff, overseeing food preparation, and maintaining kitchen safety and hygiene standards.

Responsibilities:

  • Assist in the preparation of menu items according to recipes and quality standards set by the head chef. This includes chopping vegetables, butchering meat, preparing sauces, and other culinary tasks.

  • Help manage kitchen operations, including inventory management, ordering supplies, and ensuring proper storage of ingredients. Supervise kitchen staff to ensure efficient workflow and adherence to recipes and food safety standards.

  • Collaborate with the head chef to develop new menu items or modify existing ones. Contribute ideas for seasonal menus, specials, and promotions.

  • Maintain high standards of food quality, presentation, and flavor. Conduct regular inspections of food items to ensure freshness and proper storage. Monitor portion sizes and presentation to meet customer expectations.

  • Enforce sanitation standards and kitchen hygiene practices to prevent foodborne illnesses and ensure compliance with health regulations. Monitor kitchen equipment for proper functioning and safety.

  • Work closely with other kitchen staff, including the head chef, line cooks, and dishwashers, to coordinate food preparation and service. Communicate effectively to ensure smooth workflow during busy periods.

Qualifications:

  • Previous experience working in a professional kitchen, preferably as a line cook or prep cook.

  • Culinary degree or certificate from an accredited culinary school is preferred but not required.

  • Strong knowledge of food safety and sanitation practices.

  • Ability to work in a fast-paced environment and handle high-pressure situations.

  • Excellent communication and leadership skills.

  • Attention to detail and a passion for food and cooking.

Hours may be extended or irregular to include nights, weekends and holidays.
