Title of Position: Sous Chef

Job Description: As our Sous Chef you will be responsible for leading the culinary personnel and maintaining a professional and organized kitchen. Ensuring excellent food quality and preparation will be a priority as the Sous Chef. The Sous Chef will report vital information directly to the Executive Chef. If there are occasions when the Executive Chef is unable to work, the Sous Chef assumes all duties normally designated to the Executive Chef. The Sous Chef will assist in selecting, training and coaching of the culinary staff. A Sous Chef often acts as the intermediary between the front and back of the house, so strong leadership and communication abilities are a must. Our ideal candidate will have outstanding problem solving abilities and the ability to quickly adjust to changing situations. Our Sous Chef will work closely with the Executive Chef and become familiar with administrative duties and cost control practices to expand knowledge and the ability to grow your career.

We are currently accepting applications for the following position: Lead Cook/Sous Chef (10am-630pm) The Dietary Cook / Sous Chef is responsible for the timely preparation and serving of resident meals that are consistent with departmental policies and procedures and state and federal laws and regulations. This position is responsible for ensuring the food is prepared and served timely and at the proper temperatures. ESSENTIAL POSITION FUNCTIONS: * Follows recipes and prepares food that corresponds to menu cycles prepared by the Registered Dietitian. * Cooks or prepares palatable, attractive, nutritionally adequate meals in institutional quantities at proper temperatures and at proper times. * Tastes food for proper appearance, flavor, smell, and consistency. * Assists with demonstrating, instructing and educating dietary staff on preparation, garnishing and presentation of food. * Supervises dietary staff with food preparation, assembling trays, cleaning, and storage of supplies and equipment. * Maintains a clean food service work area as food preparation and service is in process. * Uses food supplies and equipment in an efficient manner to prevent waste. * Prepares and maintains supply of food substitutes to accommodate resident choices, cultural, ethnic, and religious preferences. * Uses food preparation equipment properly and follows proper cleaning techniques and preventative maintenance schedules. * Handles, stores, and disposes of food supplies, and prepares food in accordance with departmental procedures and in compliance with state and federal regulations. * Assists in receiving and storage of deliveries from vendors. * Communicates with Dietary Services Manager throughout shift as needed to best meet needs of the residents.
