JOB SUMMARYResponsible for correctly and safely preparing food items in assigned food outlets.


  • Assists with the development of daily specials.

  • Produces a daily prep list. Prepares written daily orders.

  • Actively participates with staff to cook, prepare, dish and assemble all outlet food.

  • Adheres to control procedures for food cost and quality.

  • Encourages and abides by all health codes and hand washing guidelines.

  • Prepares all food items according to standard recipes to ensure consistency of product.

  • Be able to create compound sauces and derivatives of the mother sauces.

  • Ability to organize and delegate work assignments/tasks.

  • Ability to read and gather all necessary items for recipe execution.

  • Demonstrate ability to understand, communicate and comply with Company Policies, Processes, and Procedures.

  • Other duties as assigned.


  • Demonstrates excellent knife skills.

  • Must be able to perform all cooking duties.

  • Ability to use all equipment, systems, and tools typically associated with the position.

  • Strong verbal and written communications skills.

  • Ability to perform assigned duties under frequent time pressures.

  • High school diploma or GED equivalent preferred.

  • 3+ years' experience in commercial cooking, restaurant or other commercial food service business.

  • Ability to obtain and maintain valid state gaming license.


  • Able to stand and walk for long periods of time.

  • Frequent pushing, pulling, bending and lifting.

  • Work environment may include smoke and variable temperature, lighting and noise levels.

Key Responsibilities of the Line Cook: * Learns and maintains standards in food production and quality. * Expedites orders in a timely manner. * Practices excellent operational sanitation. * Executes scheduled banquet functions. * Maintains a professional relationship with fellow associates. * Helps reduce loss/waste. * Communicates equipment repair needs with chef. * Actively participates in training efforts. * Incorporates safe work practices in job performance. * Attends staff meetings. * Checks and dates all deliveries received and report any variances to chef in charge. * Verifies that all coolers are at the proper temperatures and are cleaned on a daily basis. * Processes inventory requisitions and receives supplies as necessary for quality production. * Prepares the proper amount of food according to production or forecast sheets and production plans. * Prepares items in accordance with established recipes for a consistent product. Minimum Qualifications for the Line Cook: * High school diploma or general education degree (GED); and one to three months related experience and/or training; or equivalent combination of education and experience.
