Job Description

The role of the sommelier is to elevate restaurant service, increase wine and beverage sales, train the staff to be a more effective sales team, manage the beverage program, and assist in restaurant service wherever needed.

Essential Job Functions

  • Responsible for ordering all alcoholic beverages and ensuring adequate inventory.

  • Assist in the daily maintenance including organization, restocking wine cellar, wine fridge, wine wall, and bar to ensure it is current, clean and organized.

  • Conduct monthly inventory working closely with restaurant leadership and accounting to resolve any inconsistencies in a timely manner.

  • Code invoices on a weekly basis and keep track of costs, credits, and accounting status in conjunction with the restaurant manager.

  • Ensure service staff is fully competent on "by the glass" selections and able to make educated recommendations from the wine list to complement the cuisine.

  • Assist in training of all new front of house staff for the restaurant

  • Ensure all wine lists and POS system are up to date and organized via a bin system

  • Assist in the planning, organization and execution of all special wine events and promotions.

  • Complete tasks and projects delegated by supervisor and assist other departments as business volumes and staff levels demand

  • Other duties as assigned

Qualifications

  • Extensive wine knowledge (successful completion of advanced level of The Court of Master Sommeliers preferred).

  • 3 years in a fine dining establishment required

  • Excellent computer skills (Excel, Word, Outlook, PowerPoint).

  • Comfortable presenting and speaking in public to large groups.

  • College preferred or hotel/restaurant training.

  • Knowledge of food and cooking methods.

  • Be familiar with F&B finance models as they relate to pricing, inventory COGS, analysis and problem solving

  • Excellent hospitality skills required

  • Previous restaurant leadership experience preferred

Supervision Given and Received

Supervision Given: This position has no supervisory responsibilities

Supervision Received: Works under general supervision of the Food & Beverage General Manager. Receives continuing or individual assignments according to supervisor's directions and may perform routine tasks. Expectations of the quality, quantity and deadlines are clearly set. Instructions, advice and assistance available as needed. Work is reviewed on demand or during scheduled check-ins.

Work Environment and Physical Demands

  • Ability to reach, crouch, kneel, smell, taste, stand, walk or be on your feet for extended periods time.

  • Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces.

  • Must be able to constantly lift, push or pull up to 50 lbs. individually or with assistance
