POSITION INFORMATION: Plans and prepares menus, prepares food in large production kitchen, manages kitchen inventory, and performs other duties (i.e. cleaning related duties) as needed to fulfill the function of the position.
Menu Development. Plans, develops, and assesses costs for menus. Prepares new recipes/entrees, salads and other menu items.
Inventory Management. Ability to take physical inventory monthly, order produce and other food items on a daily basis.
Supervision. May provide supervision and training to other food service staff.
Skill Development. Participates in ongoing skill development courses in order to stay abreast of the latest trends in the food service industry.
Food Preparation. May prepare specialty foods, such as pizzas, fish and chips, sandwiches, or tacos, following specific methods that usually require short preparation time.
Sanitation. Cleans and maintains food preparation areas, cooking surfaces, and utensils.
As Needed. Performs various duties as needed to successfully fulfill the function of the position.
Education: High School diploma, GED or graduate of a culinary school
Experience: 36 months food service experience.
Certifications/ Licenses: Possession of a valid Food Handlers Certificate/License or able to obtain within 6 months of hire.
Familiarity with preparation of gourmet type menu items.
Some experience in menu planning and costing.
Experience in complete kitchen management, ethnic cooking (including baking), salad preparation, entre selection, and pairing.
Should have the ability to understand profit and loss statement.
Able to understand & convert measurements
Basic knowledge of kitchen equipment & supplies
Able to plan a health conscience menu.
Ability to interpret information.
Work on multiple projects at one time.
Ability to hear.
Ability to speak.
Must not be susceptible to fainting, dizziness or seizures.
Must have good coordination.
