The porter helps to keep the kitchen running smoothly by making sure everything is clean, organized, safe and sanitary. When the kitchen is busy, equipment such as plates, bowls, glasses, silverware, pots and pans will need to be cleared and cleaned quickly for the team to use again. Minimum side work such as peeling vegetables or putting away deliveries will also fill time in each shift.
Operate dish machine and triple compartment sink
Wash pots, pans, plateware and smallwares
Maintain organized appearance of working areas, equipment, and storage areas
Clean areas such as floors, trash cans, dish pit, etc
Wash and disinfect kitchen appliances, work surfaces, and walls
Launder rags and aprons as needed
Unload and properly store deliveries to the kitchen
Basic food preparation (slicing meat, cutting and cleaning vegetables)
Prepare and cook rice
Assist other stations with prep work or cleanings
Maintain and checks chlorine test strips
Complete assigned tasks including opening, midshit, and closing duties
Follow all policies and procedures as set forth in the Bento Cafe Company Handbook
