The Performance Chef is responsible for the overall success of the kitchen and direction of the culinary staff. This individual must continually strive to improve their own, and all fellow staff members, knowledge and performance to ensure a world-class experience for athletes, clients, and employees.


Day to Day Kitchen Operations:

  • Support all kitchen operation functions

  • Menu planning and recipe analysis

  • Create breakfast, lunch, dinner, and catering menus according to EXOS standards and methodology

  • Maintain and manage recipe database Provide food customized for each client needs based on EXOS Culinary Exchange Program.

  • Create systems coordinated with the Performance Nutrition team to ensure that meals meet required specs

  • Must be able to work catering events, nights, and weekends as needed by client request.

  • Purchase food and supplies from vendors approved by the company and monitor inventory

  • Ensure that the kitchen and surrounding areas are sanitized and clean in accordance with company standards and health code regulations

  • Development and implementation of daily, weekly, monthly, quarterly "gold standard" food safety and sanitation protocols

  • Manage and evolve systems around pricing, operations, ordering, waste reduction, etc.

  • Maintain equipment, including refrigerators, stoves, ice machines, dish washer, etc.

  • Conduct meetings with culinary staff to ensure world-class service of clients are being met.

  • Establishes controls to minimize food and supply waste and theft.

  • Continually visits dining area and catered events to ensure all quality standards are being met and all fueling stations are stocked.

  • Perform other duties as directed.


  • Supervise, support and develop the Culinary staff in the execution of their job responsibilities based on the EXOS Nutrition & Culinary Principles

  • Training of all staff in daily kitchen duties, food safety/sanitation practices, all small/large equipment, and customer service and satisfaction

  • Continually train employees in cooking methods, presentation techniques, portion control, and retention of nutrients

  • Interview, select, train, supervise, counsel and discipline all employees in the department.

  • Instruct employees in the EXOS culinary and nutrition principals.


  • Represent the business with the highest level of professionalism and energy

  • Report on and accountable for kitchen financials

  • Maintain required records including food production, inventory, income/expenses, meal counts, food cost, payroll costs and personnel records

  • Ability to interact positively with supervisor, management, coworkers, members, and the public to promote a team effort and maintain a positive and professional approach.

  • Ability to produce a high volume of work in a timely manner, which is accurate, complete, and of high quality.

  • Ability to come to work regularly and on time, to follow directions, to take criticism, to get along with co-workers and supervisors, to treat co-workers, supervisors and members/guests with respect and courtesy, and to refrain from abusive, insubordinate and/or violent behavior.

  • Provides training and professional development opportunities for all kitchen staff.


Required Qualifications:

  • Bachelor's degree (B. A.) from four-year college or university; preferred in culinary nutrition, culinary arts or similar

  • ServSafe Food Manager Certification

  • Minimum 5 years' experience as Executive Chef in restaurant industry

  • Ability to work calmly and effectively under pressure in an open kitchen environment

  • Ability to work in a team environment

  • Commitment to quality service

Preferred Qualifications:

  • Culinary Nutrition degree and background preferred

  • Understanding of basic dietary exchange system based on (carbohydrates, protein, and fats)

  • Documented history of cost control

  • Familiarity and experience with ESHA Food Processor

  • Front of the house experience as GM or Floor Manager


  • Excellent customer service a must

  • Strong knowledge of local, state and federal food sanitation regulations a must

  • Comfortable providing direction and supervision to kitchen staff

  • Self-motivation and ability to work independently

  • Excellent leadership, time management, organizational, and communication skills

  • Strong administrative skills

  • Outstanding building and employee coaching and development skills

  • Ability to complete nutrient analysis on all menu items

  • Competence in Microsoft office, POS systems

  • Strong understanding and implementation of food service quality and safety procedures

The Operations Strategy & Performance group is responsible for developing key strategies to improve the effectiveness of our Operations in the U.S. and Canada, providing the project leadership and support needed to implement these strategies, and assisting the Operations team with thought leadership and other consulting assistance as needed. The group also provides key support activities related to operational performance and quality including resource planning, scheduling, capacity management, performance measurement and reporting, quality assurance, etc. The Operations Analyst role is a key position within the Operations Strategy and Performance group reporting to the Senior Manager, Business Process Management. This role is focused on business process design and improvement, project management and execution, and impact measurement. This individual will provide business consulting, analytical support and implementation leadership for Operations projects. This person will lead a portfolio of initiatives with multiple deliverables occurring simultaneously. He or she will ensure timely and accurate completion of all team members' assigned duties to execute and complete the project and meet leadership's expectations. RESPONSIBILITIES: Work closely with business leaders to evaluate, analyze and define business opportunities, potential solutions, and potential impacts on the organization. Support management in the planning phases, including development of project plans, detailed cost-benefit analyses, resource plans, and other materials required for formal approval. Facilitate the design of new or improved business solutions, processes, and management tools. Coordinate and implement department-level projects, ensuring timely delivery and high-quality project deliverables. Track and communicate project performance to management and key stakeholders. Maintain accurate and complete project records. Support implementation of strategic business initiatives and major projects on behalf of the business by performing additional assignments upon request from management. Build broad understanding of products and systems. Develop working relationships with management and staff across all functional areas.
