Position Description

Job Purpose:

Assist workers engaged in preparing foods for restaurant by performing a combination of duties. Also, to produce all orders on an a la carte basis and to prep for buffets, banquets, salad bars and hors d' oeuvres.

Job Responsibilities:

  • Display good customer relation skills and take initiative to greet guests in a friendly manner.

  • Follow all company and safety and security policies and procedures; report accidents, injuries and unsafe work conditions to management; complete safety training and certifications.

  • Maintain confidentiality of proprietary information and protect company assets.

  • Must be able to "prep" food products for line and banquet consumption, using standardized food preparation techniques.

  • Wash, peel, cut, and seed vegetables and fruits; clean, and cut meats, poultry, and seafood; stir and strain soups and sauces, etc.

  • Weigh and measure designated ingredients.

  • Date all food containers and rotate as per the SOP, making sure perishables are kept at proper temperatures.

  • Carry pans, kettles, and trays of food to and from work stations, stove, and refrigerator.

  • Store foods in designated areas, utilizing knowledge of temperature requirements and food spoilage. Maintain sanitary regulations of food temperatures. Rotate all products.

  • Maintain work area, including all counter tops, utensils, equipment, garbage, and refrigeration in a clean and sanitary condition in accordance with state, county, and company health regulations and work safety regulations.

  • Distribute supplies, utensils, and portable equipment, using hand truck. Prepare and organize work area.

  • Prepare all cold sauces, dressings, salads, and desserts for customer service, salad bar, buffets, banquets, and tableside service. Prepare all orders as turned in by wait staff and to ensure all orders are cooked quickly and according to order; also ensure food leaves kitchen in peak condition.

  • Maintain high standard of personal hygiene in compliance with state, county, and company policy.

  • Report to work for scheduled shift, on time and in uniform in accordance with company policy.

  • Other duties as assigned.

Job Skills:

  • Skillfully use hand tools or machines needed for your work including knives, slicers, blenders, and food processors

  • Read and follow recipes of the items to be prepared.

  • Measure, cut, or otherwise work on materials or objects with great precision.

  • Use arithmetic/geometry to figure amounts of material needed, dimensions to be followed and cost of materials.

  • Must have the ability to follow instructions and to perform assigned tasks with limited supervision.

  • Accept responsibility for the accuracy of work as completed.

Job Qualifications:

Education

  • High School Diploma or equivalent preferred.

Experience

  • Minimum three (3) months food service or related work

Supervision Exercised Supervised by the Sous Chef and First Cooks. Major Duties and Responsibilities Receive product and maintain proper storage for all product at safe temperature environment and maintains temperature logs as needed. Pre-prep all raw products for proper storage utilizing the First In First Out (FIFO) rotation system and accurate dating of products. Prep and portion products for line production use as specified. Follow standardized recipes for soups, stocks, sauces, dressings and base recipes for food production. Follow daily prep lists and production communication from management. Demonstrate knowledge of preparation method, ingredients, and background knowledge of outlet respective menu items. Assist other kitchen prep, production, service, cleaning and maintenance when necessary. Work safely and cleanly, using equipment and product correctly and safely at all times. Participates in daily stand up meetings to ensure property information is understood. Timely completion of computer assisted training as required. Ensure highest quality of products and maintain raw food product at safe temperatures per health code. Maintain a clean and safe workspace, equipment and kitchen at all times following all safety and sanitation practices. Assist in preparation of meals by performing any combination of the following tasks: wash, peel, cut vegetables and fruit prepare salads prepare breads, crackers, condiments, etc slice and grate cheese prepare and/or assist with preparation of entrees, soup, side dishes, baked goods prepare drinks Meal service duties: delivers food to tables at the beginning of the meal serve at "window" during meal times (for seconds & special requests) properly store left-overs at end of each meal oversee meal clean-up team table setting prior to meal, as needed assist in transport and set-up of picnic or or food for special events Kitchen maintenance and up-keep tasks such as: stocking, rotating stock empty trash, compost and recyclable on a regular basis fold and store kitchen laundry, prepare used linens for pick-up by laundry service receive and put away deliveries, helping unload truck as needed wash pots, pans, dishes between meals (manual and machine wash) set up pre/wash station prior to meal clean-up sweep and mop kitchen floor make sure counters, sinks, and washing area are kept clean Assist in the preparation of food for “take-out” as requested (for special guest needs, off property events, staff and events).
