Job Description

The Oklahoma Department of Agriculture, Food and Forestry (ODAFF) is seeking one full time Meat Inspector in the Food Safety Division. This position (PIN #04000772) are in state government and will work throughout Oklahoma in the following counties:

Garfield, Grant, Kay, Noble. The State of Oklahoma offers a comprehensive Benefits Package, including a generous benefit allowance to offset the cost of insurance premiums for employees and their eligible dependents. The hourly pay for this position is up to $21.63 based on education and experience.

Position Description: This position is responsible for performing inspections at meat and poultry plants in Oklahoma.

The position will be required to quickly identify abnormalities in food animals prior to and after slaughter; evaluate the adequacy and the effectiveness of Sanitation Standard Operating Procedures (SSOPs and Hazard Analysis Critical Control Point (HACCP) plans and systems including recognizing and identifying actual and potential food safety hazards in the meat-processing environment without proper inspection. Verifying that meat and poultry products involved in truck wrecks are handled properly.

Typical Functions: Quickly identify abnormalities in food animals prior to and after slaughter.

Evaluate the adequacy and the effectiveness of Sanitation Standard Operating Procedures (SSOPs) in inspected meat processing plants. Evaluate the adequacy and the effectiveness of Hazard Analysis Critical Control Point (HACCP) plans and systems including the concepts of statistical process control in inspected meat processing plants. Aseptically sample meat products for the presence of pathogens.

Recognize and identify actual and potential food safety hazards in the meat-processing environment. Be proficient in the use of laptop computers. Successfully complete the 20-day Basic Livestock Slaughter Inspection Training course and the 8-day Regulatory HACCP Inspection training course.

Have a working knowledge of federal and state laws and regulations, which relate to meat and poultry inspection. Demonstrate the ability to perform assigned duties without constant supervision. Work in areas where dangerous equipment is operating and use knives during the performance of their duties.

Work in areas where the ambient temperature can be extremely hot or cold. Successfully complete the 12-day Processing Inspection Training course. Be willing and able to pass a federal background check for credentialing.

Level Description: This is the basic level of this job family where employees are assigned responsibilities, which primarily involve inspecting, sampling and investigations of firms/businesses, or individuals regulated by the Food Safety Division. Some responsibilities may also be assigned for providing training and assistance to other programs lead or in partnership with ODAFF.

Education and Experience: Requirements at this level consist of completion of a two-year meat science program or a bachelor's degree or an equivalent combination of experience and education.

Knowledge, Skill, and Abilities: Required at this level include knowledge of procedures for inspecting, evaluating and grading various agricultural commodities; of state and USDA regulations governing the standards and transport of applicable agricultural products; of federal and state laws regarding packaging and other standards related to agricultural products; of environmental and sanitation standards; of materials and equipment used in the applicable agricultural industry; of various types of animal and plant diseases; of record keeping; of basic mathematics including percentages; and of English usage. Ability is required to conduct inspections related to agricultural products, services, and facilities to determine compliance with established standards, laws and regulations; to follow complex oral and written instructions; to communicate effectively, both orally and in writing; to establish and maintain effective working relationships with others; to attend to several matters simultaneously; to operate and maintain monitoring and detection equipment; and to apply research methodologies.

Physical Demands and Work Environment: Applicant must possess a valid Oklahoma driver's license to fulfill all job-related travel including some overnight travel and attendance of state of-state meetings.

Applicants will work in all types of weather including inclement and extreme weather conditions. Employee may work on uneven surfaces and in areas where dangerous equipment is operating.

This position is subject to a twelve-month probationary period.
