Position Summary and Responsibilities:
The primary purpose of this position is to prepare meat with a knife to exact portions while maintaining yields.
Cut meat (beef, pork, lamb, and veal) into steaks by hand to exact portions.
Pre-trim meat for cutting machines, cut stew and tips as needed.
As production demand varies, all Meat Cutters are expected to have hour and day flexibility.
Perform other duties, as assigned.
Partner with supervisor and FSQA team on product quality issues.
Maintain all work surfaces, tools, and equipment clean and sanitized.
Always follow the USDA, HACCP, SSOP, food and employee safety rules and regulations.
Wear required protective and food safety equipment at all times while in the production area.
Education and/or Work Experience Requirements:
Knowledge of beef, pork, lamb, and veal cuts.
Experience in portion control desired.
Able to multitask in a fast-paced work environment.
Excellent Communication Skills.
Excellent teamwork skills.
Self-Starter.
Basic math knowledge.
Physical Requirements:
Ability to safely and successfully perform the essential job functions consistent with the ADA, FMLA and other federal, state and local standards, including meeting qualitative and/or quantitative productivity standards.
Ability to maintain regular, punctual attendance consistent with the ADA, FMLA and other federal, state and local standards
Must be able to push, pull, lift and carry up to 80 lbs.
