The Flagg Ranch Company Chef is responsible for overall culinary operational success of the assigned property, and is additionally responsible to ensure compliance with National Park Service, Brand Standards and Internal Audits. The Chef is also responsible for the ordering of supplies, the supervision & training of staff, the monthly inventories, including labor and food costs, and the deputation of sous chefs. The location chef additionally has direct oversight and is responsible for the success of the Employee Dining Room. This is a 10-month position.

Essential job responsibilities include, but are not limited to:

  • Manage the culinary operations ofFlagg Ranch- including planning, scheduling, organizing and directing work, training personnel, and recommending applicants for employment or for discipline, termination or retention

  • Ensure daily tastings, daily line checks and kitchen stand ups take place

  • Make sure all kitchen areas are safe to work

  • Keep track of food and labor costs and make sure they are within budget liaising with General Manager.

  • Supervises cleaning of facilities and equipment and are kept to companystandards

  • Other duties as assigned by General Manager

The must haves for this position include:

  • Required to live on property in the assigned housing or employee RV park

  • Twoyears Sous Chef experience

  • Excellent communication and organizational skills

  • Large volume service restaurant experience

  • Knowledge of different stations like grill, garde manger and saut

We prefer that you additionally have the following skills / experience, but it is not required:

  • National Park Service resort experience
