General Function

The Line Cook is responsible for supporting the BOH Managers to deliver high-quality, great tasting food; proper food safety and sanitation procedures and profitability. The Line Cook is responsible for prepping ingredients and assembling dishes according to restaurant recipes and specifications.

Primary Duties and Responsibilities

  • Set up workstations with all needed ingredients, utensils and cooking equipment.

  • Prepare ingredients to use in cooking (chopping and peeling vegetables etc.).

  • Ensure great presentation by following recipes and specs.

  • Keep a sanitized and orderly environment in the kitchen.

  • Ensure food safety and sanitation guidelines are followed.

  • Ensure all food and other items are stored properly.

  • Check quality of ingredients.

  • Monitor stock levels, restock station as needed.

Secondary Duties and Responsibilities

  • Performs other job related duties and special projects as required.

Education and Experience

No education requirement. 0-2 years of related work experience.

Physical Requirements

  • Must be physically able to exert up to 50 pounds of force frequently (energy exerted); and exert up to 10 pounds of force constantly to move objects.

  • Visual requirements include vision from less than 20 inches to more than 20 feet with or without correction, depth perception, color vision (ability to identify and distinguish colors), and field of vision.

  • Must be able to perform the following physical activities: Climbing, balancing, stooping, kneeling, reaching, standing, walking, pushing, pulling, lifting, grasping, feeling, talking, hearing, and repetitive motions.

  • Must be able to stand for extended periods of time.

Working Conditions

This position is frequently exposed to temperature extremes and dampness. There are possible equipment movement hazards from electrical shock and exposure to cleaning chemicals and solvents. This is a fast paced work environment.

Equipment Used to Perform Job

All kitchen equipment including: Cash register, fryers, ovens, stoves, grills, toasters, can opener, griddle, slicer, refrigerated food prep case, thermometers, knives, dishwasher, ice machine, coffee maker, scales, pop machine, telephone, Point of Sale system.

Financial Responsibility

Responsible for company assets including equipment and merchandise.

Contacts

Has daily contact with the general public and guests. Has contact with federal/state governmental or regulatory agencies regarding inspections.

What You'll Do You are hardworking with a real passion for crafting quality dishes according to restaurant specifications. You love maintaining and building sound working relationships with your teammates. Some of your responsibilities include: * Provide excellent quality and presentation of all food to the guests in a timely manner. * Stock and maintain sufficient levels of food products at line stations to assure a smooth service period. * Item specifications, including preparation, execution, and presentation will be provided to you. * Know and comply consistently with standard portion size, cooking methods, quality standards, kitchen rules, policies and procedures. * Prevent the spoiling and contamination of foods by implementing proper sanitation practices while ensuring compliance with policy and health regulations. * Maintain a clean work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment. * Assist in the daily cleaning of the pantry, cooking line, prep kitchen, dish area, stairs, walk-in and prep area. * Report any maintenance or repairs needed to the Executive Chef. * Follow departmental policies as well as restaurant rules and regulations set forth in the Employee Handbook and by management. What You Bring * 1 year of previous experience in restaurant and/or culinary experience in a high volume, full service restaurant is preferred. * Time management and organizational ability required for high quality food production. * Ability to work with minimal direction or supervision to complete assigned tasks. * Food Handler Certification (if applicable). * Trained in knife skills and basic kitchen equipment usage. * Able to multitask in a dynamic, and fast paced environment. * You're able to establish a positive rapport with many types of personalities. * Flexible schedule, able to work evenings, weekends, and holidays when needed.
