Position Purpose
GENERAL STATEMENT OF DUTIES: The Lead Cook prepares already planned menus, recipes and meals for daily operations and special events and supervises other kitchen staff.
Essential Functions / Knowledge, Skills and Abilities
Supervises the preparation, presentation and cooking of food; meets on a daily basis with the Chef; schedules cooks duties in the kitchen for restaurant, banquets and special functions in conjunction with Chef; orders products needed to fulfill banquet needs during the absence of Chef, takes inventory on a monthly basis; plans work and coordinates kitchen activities to meet meal requirements;
Supervises, instructs, guides and gives on the job training to kitchen staff; Responsible for receiving and proper storage of incoming stock and supplies; keeps overall kitchen clean and organized ie. Walk-ins, freezer, dry storage; during the absence of the Chef, it is the responsibility of the Restaurant Lead Cook to assume control of the kitchen including attending meetings, ordering products needed; check changes, scheduling, leave detailed information on problems, food or equipment.
Qualifications - Working Environment / Minimum Qualifications
REQUIREMENTS: High school diploma or equivalent preferred.
Must have basic knowledge of health department standards and food handling and preparation. Must have working knowledge of kitchen equipment, i.e. steamers, oven, slicers, knives, etc. Formal culinary training preferred. Minimum 2 to 3 years of cooking and supervisory experience.
Must be at least 18 years of age.
