Our Hotel
With 326 guest rooms and 31 suites, Mandarin Oriental, Miami is located in Brickell Key and is a prime location for both business and leisure guests. It is an urban resort with Miami's only private beach.
Overview of Position
The La Mar Lead Bartender is responsible for, but not limited to, serving and assisting guests in a courteous and efficient manner in the bar environment, consistently mixing and serving beverages according to the set standards of the Beverage department. Further responsibilities are to create new cocktail lists, weekly promotions, train colleagues and to control beverage cost according to yearly objective.
Duties and Supporting Responsibilities
Follow guidelines for proper bar set-up
Have excellent knowledge of Bar food and drink menus (wine, beer and spirits), including other department's menus in order to make appropriate suggestions for guests
Supervise bar area is thoroughly clean throughout shift according to FLHSS standards
Properly maintains pars
Prepare and supervise beverages and cocktails are made in an efficient and consistent manner
Supervise all side work duties are completed on daily basis
Communicate with co-workers, supervisors and managers
Perform open hand service
Follow appropriate sequence of service
Provide guests with beverages and amuse bouche
Use guest names as appropriate
Acknowledge repeat guests
Acknowledge special occasions and guest preferences
Know bar seating numbers
Notify managers and chefs of allergies, dietary specifications or special requests
Understand and anticipate guest needs
Maintain attention to detail
Offer beverages and refill beverage orders before glass is half empty or offer additional beverage
Provide guests with detailed description of the menu
Helpfully recommend menu items and products to guests
Recommend wine pairings and/or cocktails
Inform guests of specials and off menu items
Accurately take guest orders
Appropriately time course of service
Ensure delivery of food and beverage items are up to quality standards
Ensure guest satisfaction after every course is served
Supervise Bus and reset tables bar countertop
Supervise table maintenance by removing dirty dishes, glasses, extra items, etc.
Offer guests coffee, desserts or after dinner drinks
Present check promptly if nothing else is desired
Properly handle special requests, such as return food procedures
Follow proper re-fire procedures
Inform managers of good and bad feedback
Thank guests, wishing them farewell and asking them to come back
Clean stations, tables, all work areas, and prepare Bar for next shift
Assist colleagues throughout service
Be flexible with schedules based on business demands
Proper handling of cash, including close out procedures
Employ suggestive up-selling techniques when appropriate and come up with ways in order to increase sales
Engage with guests as individuals with polite conversation
Able to lift up to 50lbs to assist with table moves, etc.
Able to use the POS system and accurately input all orders
Make daily supply requisition
Remain visible to guests at the bar
Attend all daily and monthly meetings
T.I.P.S. and Food Handler certified
Create and implement new cocktails into bar list
Train all staff members on cocktail recipes and presentations
Share monthly meeting with all bar colleagues and ensure follow up on discussed topics
Lead by example
Supervise beverage controls use of giggers for all recipes, labels with dates.
Ensures beverage inventories are accurate and on line with beverage budget.
The Bartender reports directly to the La Mar Restaurant Managers.
Requirements
Have a minimum of 1 year experience in the similar position, preferably in a luxury setting.
Flexible schedule is required, including evenings, weekends and holidays.
Excellent organizational skills and communication skills are necessary.
Must be able to work in a high-pace and dynamic operation.
Must be detailed oriented, excellent computer skills necessary.
Have a pleasant, friendly and helpful manner.
Work in a safe, prudent and organized manner.
Able to handle multiple tasks at one time.
