JobSummary: A Lead Baker will be responsiblefor preparing and overseeing the variety of desserts from prepared mixes. Assistin supervising and coordinating the activities of bakers encaged in baking preparationfor all bakery outlets. Maintain station and equipment clean and sanitary.

Prepare items such as but not limited to Steakhouse desserts,banquet desserts, bread making, specialty cakes, displays and other Bakeryoutlets
Instruct all bakery staff in the preparation, cooking, garnishing,or presentation of food.
Follows all recipe standards.
Prepare items listed above correctly and with minimal supervision
Once product is made, ensure that it is properly stored, wrappedor covered, and labeled correctly
Ability to reproduce an advanced dessert recipe correctly withoutassistance
Prepares food items requiring advanced technical culinary skillssuch as but not related to Garde-Manger, specialty breads and desserts,showpiece and centerpiece work, spun and pulled sugars, ice carving,tallow and food Sculptures
Assist in monitoring bakery inventory to minimize waste andconsistency in ordering
Assist in monitoring daily bakery projects in the Bake shop
Maturity and decision-making skills to facilitate completion ofprojects in a timely manner
Prepares for an increase in production so as not to fall behind
Assist in managing labor as business needs demand
Function as a liaison for Chef and communicate assigned tasks andassignments
Maintains a clean and safe working environment. Knows and followsall established sanitation policies as per the written sanitationguidelines.
Manage and track items and inventory, and ensure proper proceduresare in place and being followed
Acts as a role model to other employees and always present oneselfas a credit to Harrah's and encourages other to do the same.

High schooldiploma or GED required.
2 years bakingexperience required.
Familiar withweights and measures used in baking.
All Lead Baker'smust have knowledge of proper mixing techniques.
Working knowledgeand the ability to work in all classifications below a Lead Baker level arerequired.
All Lead Baker's mustdemonstrate a certain level of proficiency in all areas of the bakery such asbut not limited to weights and measures, scratch baking, bread making, cakedecorating.
Must be able towork any day of the week and any shift.
Must be able toget along with co-workers and work as a team.
PHYSICAL,MENTAL AND ENVIRONMENTAL DEMANDS:
Mobility and dexterity to move large, heavy objects up to 100pounds.
Manual dexterity to include using kitchen utensils such as knives,spatulas, food tongs, etc and handling of food items.
Must be able to work inside a kitchen and on a line during theentire shift
Must be able tolerate areas with extreme hot and cold temperatures
Must be able to work in and around heat. Employees will also beexposed to basic baking ingredients (e.g. oil, water, flour, nuts, fruits,and grains).
Must stand for long periods of time and work throughout entireshift.
Must be able to bend, stoop, reach, crouch, kneel, push, and pullwhen rotating stock and cleaning work area
Must be able to lift up to 100 pounds
Must be able to operate the following kitchen equipment: stoves,grills, fryers, and other utensils in preparing food orders
Must be able to respond to visual and aural cues
Must be able to work at a fast pace and in stressful situations.
Must be able to speak, read, write and understand English and beable to conduct conversations with peers in a distinctive and persuasivemanner.
Must be able to operate the following kitchen equipment: mixers(both standing and table top), carousel oven, and re-vent oven inpreparing baked goods.
