Prepare and cook foods of all types, either on a regular basis or for guests or functions. Lead the AM Culinary Team.

POSITION MISSION/OVERVIEW

This job contributes to the success of Willows Lodge by ensuring our Service Standards are met. We do this by consistently delivering truly personalized service to every guest, every moment of every day. This job also performs additional responsibilities as needed to help the department manager with daily operating procedures such as maintaining quality operations, and maximizing financial contributions.

ESSENTIAL JOB FUNCTIONS/RESPONSIBILITIES

  • Coordinate activities of AM Line Cooks and workers engaged in food preparation.

  • Collaborate with chef team to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customers.

  • Check the quality of raw and cooked food products to ensure that standards are met.

  • Inspect supplies, equipment, and work areas to ensure conformance to established standards.

  • Order or requisition food and other supplies needed to ensure efficient operation.

  • Record production and operational data on specified forms.

  • Ensure that the day starts correctly by communicating with employees, other supervisory personnel and chef.

  • Coordinate with other departments to ensure that special guest requests are completed and created in a timely manner.

  • Maintain the overall operations of the kitchen in the absence of managing chefs.

  • Read menus to estimate food requirements and procures food from storage.

  • Wash, peel, cut, and shred vegetables and fruits to prepare them for use.

  • Adjust thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettles.

  • Bake, roast, broil, and steam meats, fish, vegetables, and other foods.

  • Add seasoning to foods during mixing or cooking.

  • Observe and test foods being cooked by tasting, smelling, and piercing with fork or thermometer to determine that it is cooked.

  • Carve meats, portions food on serving plates, add gravies and sauces, and garnish servings to fill orders.

  • Slice roast such as beef, veal, pork, and lamb for cold plates or sandwiches.

  • Cut luncheon meats such as head cheese, pork loaf, veal loaf, and ham.

  • Prepare food showpieces.

  • Measures, portions or otherwise prepares beverages and food with great precision and efficiency.

  • Accurately completes forms, waste logs, production sheets, etc.

  • Communicates ingredients, preparation methods and promotions to guests as appropriate.

OTHER SKILLS/ABILITIES

  • Reads and understands and complies with instructions, safety rules and guidelines.

  • Speaks with poise, voice control and confidence using proper English and a well-modulated voice.

What Will Set You Apart: * High school diploma or State-issued equivalency certificate plus 4 years of basic food service experience reflecting increasing levels of responsibility. * Possession of ServeSafe Certification. * Basic understanding of professional cooking skills. * Experience demonstrating excellent communication. * Experience working as part of a team. * Continually strive to achieve personal goals and objectives. * Experience communicating relevant business information regularly, efficiently and concisely.
