Management experience

5+ years of kitchen experience

Proficiency in culinary knowledge

Basic computer skills

ServSafe certified

Position Summary

Preparation and present all foods for banquet events and in the Savannah Room. Work at catered off-site events and services if necessary. Follow sanitation health standards. Keep all workspaces clean and ready for certified inspections at all times. Work in any other areas of the department as needed.

Knowledge, Skills, Abilities and/or Competencies

  • Thorough knowledge of the materials methods and equipment used in preparing food on a large scale.

  • Considerable knowledge of health hazards in food prep and service and of effective precautionary measures.

  • Considerable knowledge of a large variety of food recipes.

  • Considerable knowledge of food values, menu planning and uses for left-over food.

  • Strong leadership, organizational, and decision-making skills.

  • Knowledge of effective supervisory methods and techniques.

  • Knowledge of raw materials, production processes, quality control, costs, and other techniques for maximizing the effective manufacture and distribution of goods

  • Ability to work from written menus and standard recipes.

  • Ability to maintain records of output, quantities of ingredients used, and supplies on hand.

  • Ability to manage one's own time and the time of others, as well as instruct and teach them tasks to be completed.

  • Ability to exercise good judgment and decision-making skills, considering the relative costs and benefits of potential actions to choose the most appropriate one.

  • Ability to critically think by using logic and reasoning to identify the strengths and weaknesses of alternative solutions, conclusions or approaches to problems.

  • Ability to work long hours while standing and under conditions of high temperatures.

  • Ability to communicate effectively and follow direction from supervisor.

Physical Demands

  • Standing and walking for long periods.

  • Bending/stooping, and kneeling/and squatting.

  • Reach/grasp, overhead work, push/pull, repetitive use of hands, and handling cleaning chemicals.

  • Lift/carry up to 25 pounds.

  • Driving as needed to perform job duties.

Duties/Responsibilities

Duties/Responsibilities

Preparation and cook for the Savannah Room, and AM and PM banquets as needed.

  • Present and prepare all food for banquets and the Savannah Room

  • Cook a wide variety of proteins, vegetables, starches, and sauces

  • Taste test and evaluate foods before serving to ensure consistency and high-quality standards are met

  • Read and understand banquet event orders (BEO)

Percentage of time 60 Duties/Responsibilities

Manage and communicate personal work load to ensure economical use of food and timely preparation.

  • Communicate with all chefs regarding menu items, problem situations and/or shortages.

Percentage of time 10 Duties/Responsibilities

  • Perform all duties while minimizing waste and impacting both food cost and inventory in a positive manner.

Percentage of time 10 Duties/Responsibilities

Perform all duties using the proper sanitation practices.

  • Ensure food safety by dating and rotating food containers, safely storing perishables, and maintaining a sanitary work environment.

  • Be prepared for certified inspections at all times.
