Kitchen Steward

The primary responsibility of the Steward is to clean all stoves, ovens, grills and other kitchen equipment correctly and thoroughly. All duties are to be performed in accordance with TBC departmental and our Client's policies, practices, and procedures.

Essential Duties & Responsibilities:

  • Deep clean all kitchen equipment safely, correctly, and thoroughly in accordance to TBC standards.

  • Performs all tasks as per the standards.

  • Operate the industrial dishwashing machine and other industrial cleaning equipment.

  • Move equipment around to supply the various areas of the food and beverage department.

  • Use of industrial strength cleaning chemicals required.

  • Able to multi-task and be a team player.

  • High standard of cleanliness and safety guidelines.

  • Sweep, scrub and mop floors pressure clean as needed

  • Transport garbage to compactors/recycling.

  • Follow directions from the Executive Chef.

  • Additional tasks as assigned by management.

  • Comply with policies and procedures of the department or section in order to complete service satisfactorily.

  • Proper performance requires some physical and mental dexterity in order to accomplish tasks associated with the completion of the service.

  • Completion of a task or assignment requires use of equipment, tools or systems related to the proper performance of the service.

  • Consistent and regular attendance is an essential function of this job

Minimum Qualifications:

  • 21 years of age.

  • High school Diploma or equivalent.

  • Must be able to communicate effectively in a positive/upbeat fashion utilizing English, both in oral and written form.

  • Must maintain a professional, neat and well-groomed appearance adhering to Company appearance standards.

  • Must be able to work varied shifts, including weekends and holidays.

  • 1-year experience with kitchen cleaning in a restaurant or banquet facility preferred.

  • Must be able to obtain a health card.

  • Must be able to work with others, communicate well, give direction, review the work of others, and provide guidance and counsel when needed to achieve department goals and objectives.

Physical Requirements:

  • Physical ability to access all areas of the property.

  • Must be able to withstand prolonged standing, stretching, bending and kneeling without restriction, work indoors and be exposed to various environmental factors such as, but not limited to CRT fatigue, noise, dust, cigarette smoke.

  • Must be able to work in a fast-paced, busy, and somewhat stressful environment and maintain physical stamina, proper mental attitude while dealing effectively with guests, management, team members, and outside contacts while working under pressure and meeting deadlines.

  • Ability to lift or carry a minimum of 50 pounds, unassisted, in the performance of specific tasks assigned.

  • Must be able to touch and handle supplies in a safe and non-hazardous manner, maintaining proper hygiene, cleanliness, and disposal methods.

Overview The Stewarding Manager is responsible for overseeing the operations of the stewarding department, continuously monitoring quality of work performed by kitchen support personnel, dishwashers, cleaners, stock/warehouse attendants, etc. This individual works closely with the Chefs and various F&B management team members to ensure service excellence is maintained for all F&B outlets. This includes quality inspection audits and the continuous training of stewarding personnel to fulfill the service expectations under this responsibility. Must maintain ServSafe Manager Certification. ESSENTIAL FUNCTIONS: * Constantly responsible for stewarding personnel to properly carry out all assigned responsibilities. * Conduct on-going training of departmental equipment and supplies. * Responsible for training in food, health and safety of all divisional personnel. * Constantly responsible for walk-through quality audits/inspections of all kitchen and service areas. * Ability to work with all equipment and supplies in department. * Assists in conducting monthly inventories, (daily usage and specialty items) maintaining established pars and ordering necessary equipment. * Assists in maintaining all equipment and coordinate repairs when necessary. * Attends meetings as directed. * Constantly communicates with all employee relation issues, paperwork consisting of records and miscellaneous matters. * Communicates to employees' policies, procedures, standards and expectations. * Ensures all proper health and fire code requirements are communicated to employees and maintained. * Communicates job assignments to employees. * Works closely with all departments to ensure effective service. EDUCATION and/or EXPERIENCE: * High school diploma or equivalent and at least 3-years prior supervisory experience consisting of business management, record keeping, purchasing basics, knowledge of kitchens and dish machines, inventory control, fire safety and chemical awareness programs. * Ability to be flexible, handle multiple tasks, and be observant. * Must possess excellent communication and people skills. * Must be able to speak, read, write and understand English. * Previous experience working in a similar resort setting KNOWLEDGE/SKILLS/ABILITIES: * Requires reading, writing and comprehension of English. * Capable of lifting and carrying up to a maximum of 50 lbs., alone, for distances up to 500 ft. * Frequently Washing, Rinsing, Bussing * Frequently stooping, bending, twisting and reaching. * Frequently pushing and pulling up to a maximum of 1,200 lbs. * Must be extremely flexible with schedule. * Work is performed indoors in a climate-controlled environment and outdoors with occasional temperature changes. * Work with others, sometimes in close spaces. * Moderate noise levels. * Walking and standing on tile and mats * HAZARDS: Heavy lifting/pushing, wet floors, chemical odors. WORK SCHEDULE/HOURS: * Regular scheduled hours: Must be flexible if needed for occasional work outside of normal business hours.
