Overview

Supervises and coordinates activities of the garde manger department engaged in the preparation of appetizers, salads, tea sandwiches, meat, fruit, vegetable and cheese presentations, salad dressings, sauces.

Responsibilities

  • Communicates with the Executive Chef / Sous chefs concerning special events and requirements.

  • Plans production and maintains production records for garde manger department according to menu or special requirements.

  • Develops and implements recipes and determines methods to garde manger workers.

  • Plans or participates in planning menus and utilization of food surpluses and leftovers, taking into account the number of guests, popularity of various dishes, and Banquet menus.

  • Estimates food consumptions accurately and requisitions food items and kitchen supplies.

  • Help develop and implement recipes, pick up sheets and picture books with corresponding departmental menus.

  • Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner.

  • Responsible for cold presentations on buffets with approval from chefs.

  • Devises special dishes, develops recipes of special dishes.

  • Observes and tests all foods by taste, smell and proper temperature

  • Can multitask and work well with deadlines

  • Can work well with coworkers with different skill sets

  • Must be very organized and have kitchen organizational skills

  • Able to sit in BEO meeting MWF every week. Be able to Read a Banquet Event Order

  • Ability to execute proper knife skills and handling of required equipment.

  • Responsible for following established health and safety standards.

  • Trains and supervises employees in the performance of their duties an a daily basis. Supervises cooking and departmental staff to ensure that quality standards are met in a timely fashion

Qualifications

  • Finger/hand dexterity in order to operate food machinery with or without reasonable accommodation.

  • Ability to grasp, lift and/or carry, or otherwise, move goods weighing a maximum of 100 lbs. on a continuous schedule with or without reasonable accommodation.

  • Effective verbal and written communication skills. Ability to adapt communication style to suit different audiences, such as effectively communicating with supervisors, coworkers, public etc.

  • 2-3 years culinary experience in hotel, resort or cruise ship.
