Momence Packing is a harvest facility and manufacturer that exclusively produces sausage products for Johnsonville, LLC. Johnsonville is the No. 1 national brand of brats, Italian sausage, smoked-cooked links and fresh breakfast sausage links. The responsibilities of this position are, but not limited to, the monitoring, data recording and improvement of harvesting and processing procedures for quality assurance purposes. This position will function during the end of 1st shift operations until the middle of 2nd shift operations.
Ensure that walkthroughs are performed during each shift. The duties of a walkthrough include, but are not limited to:
Audit each processing line to evaluate products and by-product
Ensuring plant all HACCP, USDA, SOP's, Best Practices and FSQ standards
Verify and collect sample of lactic acid and citric acid for use in processing. Send sample to analytical lab for chemical analysis and maintain record.
Verify all HACCP procedures for compliance and acceptance a minimum of twice weekly.
Fill the role of any absent quality members in the occurrence of sickness, vacation, travel, etc.
Coverage in the processing room will be @ 35 %.
Back up for creation of production schedule, Daily perform data entry and verify for accuracy. Any variance for spice, combos work with members to resolve.
At least once a week, perform a finished good audit on a processing line to identify any defective products. Perform data entry and make a report with any corrective actions.
Oversight of micro lab
Keep micro lab clean and inventory/supply update.
Coordinate with Countryside for results/supply/shared learning
Monitoring animal handling practices
Must be able to quickly respond to any calls for quality assistance in all production areas. Discuss issues with supervisors and make executive decisions regarding any FSQ issues.
Manage PONC, FPQ, defective and foreign object findings and reports from the plant.
Manage and document all products to be placed on hold until a decision is made.
Able to make decisions affecting product viability in the field.
Incident report & follow up. Internal & External Customer complaints
Testing, Record Keeping and Data Entry
Perform data entry for shelf life studies, monthly X-ray results,
Review and update Quality Plan Manual as needed.
Monitor and verify operational thermometers in production and processing. Notify maintenance personnel of any violations.
Review daily processing lines' paperwork to ensure all SOP's were followed.
Sample and evaluate product for physical characteristics and chemical composition.
Plate and count colonies of microbiological swabs. Report any findings to relevant parties.
Calibration of equipment, validation, verification of process
R&D and Continuous Improvement Assistance
Act as a mobile resource for any research and development, or continuous improvement projects.
Assist with local R&D projects. Responsible for all on-site testing and sample shipment to other facilities.
Identify potential situations that could be made more efficient and report to the FSQ team
SOP, formulation, SDS and allergen control
KNOWLEDGE AND SKILL REQUIREMENTS
HACCP, SQF, USDA Experience
Complete all mandatory trainings required in Safety and Quality.
Computer Knowledge (SAP, Outlook, Windows 7, MS Office)
Able to work in a fast paced environment.
Good Communication skills
BS Or Associate in Science or related Field.
Member must be able to work in a humid and wet environment. Temperatures will vary depending on time of the year (winter /summer). Must be able to tolerate animal odors. Physical demands for this position require being able to walk and stand most of the time. Member must be able to lift 15 to 25 pounds, carry and push or pull 5 to 25 pounds approximately.
