The Westin Portland Harborview, a Marriott brand, and New Castle Hotels & Resorts' managed property is currently seeking a Director of Food and Beverage to join our team. The Westin Portland Harborview is the premier hotel and event location in downtown Portland's Arts District, featuring over 15,000 square feet of meeting and conference space, 289 guest rooms, a fine dining restaurant and the iconic Top of The East Lounge. This historic building has truly transformed itself over the last 90 years and now provides a classy and sophisticated meeting place for all visitors to gather.
This job exists to coordinate, supervise, and direct all hotel food and beverage operations.
Accountabilities: The Director of Food & Beverage is expected to maintain a profitable food & beverage department while maintaining high quality products and service and acting as a member of the Executive Committee. The department must achieve or exceed budgeted revenues, profit margins, food & beverage costs, and labor and expense percentages, and maximize G.S.I.
Education & Experience:
At least 5 years of progressive experience food & beverage in a resort or hotel
Experience with multiple hotel outlets (i.e: Banquets, Restaurant, Lounge, In Room Dining)
Valid ServSafe Certificate
High School diploma required
Previous management experience required
College course work in related field preferred
Tools & Equipment:
Calculator, computer, copier, scanner, other office equipment
Credit card authorization machine, cash register
CO2 Systems, keg tap systems, blender, sound system, wine opener
Ability to work in Excel, Word.
Manage and oversee all food & beverage (F&B) outlets in the hotel, including: Banquets, Kitchen, Restaurant, Lounge, In Room Dining, Coffee Shop, and Associate Dining Room
Supervise & manage staff including; interview, hire, schedule, train, develop, empower, coach & counsel, performance management, recommend and conduct salary reviews, resolve problems, provide open communications, recommend discipline & termination as appropriate
Ensure food & beverage outlet alignment with budget, F&B, and Hotel goals
Partner with outlet leadership to drive business, ensure quality service, and to create a highly engaged team
Act as a food & beverage strategic business partner to the operation; guide, consult, and recommend changes to the General Manager, Assistant General Manager, and Director of Sales & Marketing
Partner with all Executive Committee team members and participate on the Executive Committee
Ensure compliance with all Westin brand standards; remain alert & on top of all brand updates and activity; promote the brand as much as possible; provide brand education & training to all F&B leaders and team members
Ensure compliance with all Marriott standards and adherence to all Quality Assurance guidelines
Utilize New Castle Hotels & Resorts training resources and follow all processes & procedures set forth by the management company
Work closely with the Executive Chef in the drafting, designing and implementation of the menus and implementation of the wine and bar lists.
Maintain open door policy
Check and respond to electronic communications in a timely fashion
Check appearance of all department employees to ensure compliance with NCHR Standards of Appearance, counsel when necessary
Develop, compile and implement menus
Leads by example and promotes a team-oriented culture.
Respond to guest complaints in a timely manner
Monitor industry trends, take appropriate action to maintain competitive and profitable operations
Ensure strong partnership with Sales & Marketing, in order to achieve sales & profitability
Keep immediate supervisor fully informed of all problems or matters requiring his or her attention
Coordinate and monitor all phases of loss prevention in the Food & Beverage department
Submit required reports in a timely manner
Prepare weekly work schedule and payroll for staff
Organize and conduct department meetings on a regular basis
Monitor quality of service and food and beverage
Ensure preparation of required reports
Ensure purchases of food and beverage items, within budget allocation
Ensure compliance with all local liquor laws, and health & sanitation regulations
Ensure departmental compliance with S.O.P.s
Create and/or approve and implement training manuals
Be up to date on all guest services, promotions and events in the Hotel
Approach all encounters with guests and employees in a friendly, service oriented manner
Maintain regular attendance in compliance with New Castle standards, as required by scheduling which will vary according to the needs of the hotel
Maintain high standards of personal appearance and grooming, which include wearing the proper uniform and name tag when working
Comply at all times with New Castle standards and regulations to encourage safe and efficient hotel operations
Other duties as required
Complete special projects in a timely manner as required by General Manager
Conduct and attend all required meetings
