QUALIFICATIONS

License /Certification

Required: ServSafe Food Protection Manager Certification within six months of hire/transfer.

Education

Required: Must have one of the following items listed below within one year of hire/transfer:

Bachelor's degree in food and nutrition, dietetics or food management and one year of experience in the dietetic service of a licensed health facility

Dietetic Technician Registered (DTR)

Certified Dietary manager (CDM)

Graduate of a dietetic assistant training program approved by the American Dietetic Association

Graduate from a state approved program that provides a minimum of 90 hours of classroom instruction in dietetic service supervision, or a minimum of 90 hours of combined classroom instruction and instructor led interactive web-based instruction in dietetic service supervision.

Received training experience in food service supervision and management in the military equivalent to either DTR, a graduate of a dietetic assistant or state approved program as mentioned above.

Preferred: Associate's degree in Food Services or Business

Experience

Required: Four years supervisory/management experience in a food service environment.

JOB RESPONSIBILITIES

Essential

Provides overall management and direction to respective Food Services area.

Demonstrates effective leadership abilities and is responsible for direct supervision of food and service to customers and patients.

Establishes and monitors compliance to current policies and procedures concerning food procurement, preparation and service which reflect compliance with corporate and regulatory guidelines.

Participates with leadership in planning, standardization and operational changes.

Establishes work processes, quality and productivity standards to ensure optimal performance.

Assures the Food Services area/location is maintained in a safe, sanitary manner in accordance with established safety and infection control guidelines. Ensures that all foods are at appropriate temperatures per HACCP guidelines and customer expectations and proper records are maintained.

Establishes and maintains clear lines of communication between Food Services area and other departments and services.

Demonstrates ability to withstand pressures of volume feeding and effectiveness in communication with personnel.

Responsible for purchasing according to department specifications for food and/or supplies.

Responsible for performing personnel tasks including employee evaluations, hiring, training, and disciplinary actions.

Coaches/trains staff so that they can competently meet expectations.

Manages staffing and scheduling functions to achieve department objectives, cost effective staffing and productivity targets.

Maintains/ensures accurate effective cash handling procedures are in place and followed at all times as per KDH policies.

Works closely with the Executive Chef and Patient Food Services Manager to develop/implement menus which are properly priced, appealing, based on customer and patient feedback and in accordance to guidelines.

Maintains accurate catering needs/records/costing via Peoplesoft software program.

Is the gatekeeper for the Café register system "Infogenisis."

Identifies needs, makes recommendations, and implements retail and patient trayline processes for quality improvement that creates perceived value to customers and patients, and stays within budgetary limits.

Trains employees in customer and patient service, cash handling, and sanitation of retail and patient service areas.

Tracks and analyzes Café sales figures, maintains proper pricing, plans and implements Theme Days and Special Events.

Reviews department logs, temperature and task, for completeness and accurecy and follows up as is appropriate with staff for any outstanding issues.

Visits patients to see their level of satisfaction with Food & Nutrition Services and does service recovery as is appropriate.

Addendum (essential for specific dept)

AM supervisor shift is responsible for opening the kitchen at 5AM.

PM supervisor is responsible for closing the kitchen at 11PM.

Additional

Demonstrates the knowledge and skills necessary to provide care and services appropriate to the population served on the assigned unit or work area.

Pay Range

$30.76 -$46.14
