The Department of Corrections, Division of Institutions, is recruiting for applicants who are interested in pursuing a professional and rewarding career as a Food Service Supervisor at the Yukon Kuskokwim Correctional Center (YKCC) located in Bethel, Alaska.
What you will be doing:
This position is responsible for the food service operations at the Yukon-Kuskokwim Correctional Center (YKCC). Its focus is the administrative functions, planning, developing standards, policies and procedures, procurement of food, equipment and supplies, inventory control, preparation of a cyclic menu system, development and implementation of standardized recipes for quality control, record keeping and preparation of monthly, quarterly and annual reports, scheduling and timekeeping of staff and inmates, training and development.
This position is responsible for developing standards and procedures that apply to a complex inmate population; sentenced inmates, non-sentenced inmates (which are short term and have high turnover and changing needs), multiple custody levels, and both female and male population. In addition, YKCC provides meals to the Bethel Youth Facility.
Primary duties focus on administrative functions, planning, developing standards, food service policy and procedures, procurement of all food products, cleaning supplies and equipment, inventory control, preparing menus, controlling and assisting in preparing the budget, keeping records and preparing reports, and supervision of all food service employees.
Supervising inmates with little or no knowledge of the food service and/or DOC health sanitation or safety requirements. This position requires constant training of inmate staff and working with unpredictable inmates in a very volatile area with many potential weapons.

The Yukon Kuskokwim Correctional Facility is located in western Alaska at Bethel on the Kuskokwim River with a geographic area that includes the villages of the Central and Lower Kuskokwim River, the Lower Yukon River, Nunivak Island and the coast of the Bering Sea from the mouth of the Yukon River to Cape Newenham. The entire area encompasses over 58,000 square miles, with a population a little over 25,000 people, just as big as the state of New York. No roads connect the 56 remote villages in the Region, making them only accessible by boat, barge, plane, snowmobile or four-wheeler. Assist with operating, making repairs, and maintaining the water treatment system to produce a sufficient amount of potable water for food production, human consumption, cleaning, bathing, sanitation, laundry, and waste needs
Who we are looking for:
We are looking for a candidate that has the following competencies to be successful in this position:
management, including planning, budgeting, purchasing, staffing, and supervision;
preparation of food for modified diets;
food items and supplies;
preparations; food values, characteristics and nutrition; personal hygiene, food
handling, sanitation, and safety precautions;
food preparation and serving
inventory controls and reports
Ability to maintain proper safety and security precautions;
Food Safety Certification, CPR and First Aid certification with yearly re-certifications; and
• Culinary school graduate, Commercial Kitchen Management or Military Food Service
certification is preferred.
Minimum Qualifications
A certificate from an accredited college, technical or vocational school for completion of a course of study in professional cooking, food service/dietary management, food technology, culinary arts, food science/nutrition, dietetics, chef's training or a closely related area.
AND
One year of lead level experience in food preparation in a custodial/residential institution. This experience is met by service as a Food Service, Lead with the State of Alaska or the equivalent elsewhere.
Substitution:
One year of food service experience which includes nutrition and menu planning, staff scheduling, food safety and handling, and purchasing and inventory management in a custodial/residential institution will substitute for the certification.
There is no substitute for the one year of lead level experience
Special Note
Most positions require understanding of and willingness to work with the resident population of a state correctional facility, psychiatric hospital, retirement home, senior/geriatric center or center for the developmentally disabled. Incumbents are required to adhere to the statutes, rules, regulations, policies and procedures of the institution which govern such activities as interaction with inmates/residents, employee conduct, security and property protection. Performance of duties may include sole responsibility for the supervision and security of inmates/residents.

PREA NOTIFICATION
The Department of Corrections follows and maintains federal and state requirements standards including, but not limited to, Prison Rape Elimination Act (PREA) standards which apply to all public and private institutions that house adult or juvenile offenders. PREA standards preclude the department from hiring or promoting anyone who has engaged in, or been convicted of any conduct which would violate PREA standards related to sexual assault including:
Sexual abuse in a prison, jail, lockup, community confinement facility, juvenile facility, or other institution;
Convicted of engaging or attempting to engage in sexual activity in the community facilitated by force, overt or implied threats of force, or coercion, or if the victim did not consent or was unable to consent or refuse; or,
Has been civilly or administratively adjudicated to have engaged in the activity described above.

CRIMINAL HISTORY CHECK & APSIN
Please be aware - this position requires the use of the Alaska Public Safety Information Network (APSIN). A security clearance issued by the Department of Public Safety (DPS) is necessary to use APSIN. DPS will deny security clearance for any applicant who has been convicted of a felony or misdemeanor in this state or another jurisdiction, or who may be a fugitive from justice. Additionally, security clearance will be withdrawn if DPS discovers that material information was falsified or omitted at the time of the initial application for security clearance.

If utilizing this education, you must show that the education credentials have been submitted to a private organization that specializes in interpretation of foreign educational credentials and that such education has been deemed to be at least equivalent to that gained in conventional U.S. education programs; or an accredited U.S. post-secondary institution reports the other institution as one whose transcript is given full value, or full value is given in subject areas applicable to the curricula at the post-secondary institution.
