Description

Manager of operations, responsible for developing and executing strategy to meet operating and financial goals. Leads the operations of food service accounts by ensuring areas of responsibility meet objectives and client expectations.

Essential Functions:

  • Leadership: Lead, mentor, engage and develop teams to maximize their contributions, including recruiting, assessing, training, coaching and managing performance.

    Ensure food services appropriately connects to the Executional Framework. Coach employees by creating a shared understanding about what needs to be achieved and how to execute. Reward and recognize employees. Ensure safety and sanitation standards in all operations.

  • Client Relationship: Develop and maintain effective client and customer rapport for mutually beneficial business relationship.

    Demonstrate excellent customer service using Aramark's standard model. Identify client needs and effectively communicate operational progress.

  • Financial Performance: Adopt Aramark process and systems.

    Build revenue and manage budget, including cost controls with regard to food, beverage and labor. Ensure the completion and maintenance of P&L statements. Achieve food and labor targets. Manage resources to ensure quality and cost control within budgetary guidelines.

  • Productivity: Implement and maintain Aramark agenda for both labor and food initiatives.

    Create value through efficient operations, appropriate cost controls and profit management. Full compliance with Operational Excellence fundamentals, including food and labor. Direct and oversee operations related to production, distribution and food service.

  • Compliance: Maintain a safe and healthy environment for clients, customers and employees. Comply with all applicable policies, rules and regulations, including but not limited to those relating to safety, health, wage and hour.

Qualifications

  • Requires at least 4 years experience and 1-3 years in a management role.

  • Bachelor's degree or equivalent experience

The Director of Culinary Development will assume the senior culinary leadership position to the West Region and will lead as a strategic partner to the regional team, in implementing and executing programs that are aligned with Business Dining, GOE and regional business initiatives. This position reports directly to the Regional Vice President. In addition to the regional responsibilities, the Director of Culinary Development will be responsible for developing and driving one centrally led initiative across the Business Dining West Region portfolio. Examples may include standardized menus, productivity initiatives around food and labor, supply chain enhancements, or innovation development within F&B. Position Summary: * Overall responsibility to lead the culinary development for menus, popups, National Food Holidays, and Premium Special offerings. Ensure that all recipes are accurate from a flavor, yield and nutritional perspective. * Assume responsibility for leading the culinary development of retail menu solutions. * Development of on trend flavor profiles relevant to the consumers. * Each project to be managed through a culinary scope document that details the complete deliverables of the project including a detailed timeline. * Responsible for the culinary aspects of the consumer insight process as they relate to retail recipe development * Effectively engage with the team to share experiences, provide leadership growth opportunities, insight, coaching and career development. Work with RVP, District Managers, and General Managers to effectively source and on-board new team members and execute key training, and development programs. * Proactive thought leadership and collaboration with Aramark functional teams specifically aligning with the Culinary Ops, Food Management, Distribution and Safety and Risk Control Teams. * Ensuring close coordination and collaboration with our Menu Category Development Directors and Operations team during all stages of development. * Leveraging strategic, third-party relationships, i.e. manufacturers, consultants and institutions; working with identified field resources as a part of the development process. * Close collaboration with Culinary Operations to ensure that we are developing with specified products, that have broad availability to the field locations and conforming to established culinary systems & standards processes and recipe protocols. * Lead the Development chefs on Enterprise Culinary projects. * Management and coordination of the Retail Master Recipe File and the retail recipe database with non-retail recipes for optimal cross functionality. * Coordination of Retail Recipe Development Sessions. * Coordination of field recipe requests and input. Qualifications * Culinary Degree required with advanced work in Culinary Arts. Bachelor's degree preferred. CEC or CRC with R&D experience a plus. * ProChef Certification strongly desired. * Minimum 10 years progressive Culinary experience, post degree completion with Executive Chef-level experience in food service, corporate, restaurant or hotel facilities. * Experience with new concept, menu and recipe development, food presentation and creative skills that result in the achievement of business objectives. Chain restaurant R&D experiences a plus. * Computer skills including Microsoft Office, Food Production Management systems, recipe database, and presentation software. * Strong qualitative and quantitative to develop culinary strategies based on consumer insights * Requires culinary vision and a passion for food. * Requires excellent written and oral communication skills, as well as presentation skills. * Requires strong interpersonal and motivational skills. * Requires strong attention to detail and ability to envision the implementation tools needed to successfully utilize a concept or brand at the unit level. * Has the perseverance and the ability to drive complicated projects to a successful conclusion. * Ability to deal with ambiguity and effectively cope with change. * Thrives on functioning independently with a minimum of supervision, and also in a team environment. * Draws on diverse resources to make high quality decisions. * Demonstrated ability to successfully develop scalable and sustaining recipes, menus and programs for multi-unit restaurant concepts, including recipes that meet specific Health & Wellness criteria. * A natural leader with high energy and a sense of enthusiasm that can inspire motivate and develop others, thereby creating vision and commitment throughout the organization.
