Food Service Administrator

Position Summary

Under the general supervision of the Correctional Management Services Director this position is responsible for the planning, direction and operations of the complex food service program at the Racine Correctional Institution, a medium security institution for adult males and Sturtevant Transitional Facility, a minimum-security facility. The Institution's Food Service Department is responsible for the preparations, distribution and serving of meals and medically ordered modified diets for a Persons In Our Care (PIOC) population of approximately 1850. In addition, over 320 staff eat meals on post.

The position is responsible for the supervision of staff and PIOC workers, the implementation of a modified diet program, budgeting, safety and sanitation as well as the management of supplies and services

Salary Information

This position is in pay schedule/range (81-03) with an annual salary of $61,360 - $90,396, plus excellent benefits. Pay will be set in accordance with the Compensation Plan and Wisconsin Administrative Code in effect at the time of hire. A probationary period (or career executive trial period) is required.

Job Details

Applicants must be legally authorized to work in the United States (i.e. a citizen or national of the U.S., a lawful permanent resident, or an alien authorized to work in the U.S. without DOC sponsorship) at the time of application.

The Department of Corrections may conduct pre-employment drug screens. Any applicant who is offered employment in a position which requires a pre-employment drug screen must pass the screen as a contingency of employment.

The Department of Corrections will conduct criminal background checks on applicants prior to selection. Upon hire, all new DOC employees are subject to fingerprinting.

As public safety employees, remote work is not an option for these positions.

Qualifications

Minimally qualified applicants will have experience:

• Leadership or supervision experience (e.g. assigning, directing, evaluating work, providing training).

• Experience managing a food service operation (master menus, standard recipes, production sheets, evaluate compliance, etc.).

• Experience in maintaining inventory, to include food supplies, material, and equipment.

In addition to the above, well qualified applicants will have experience:

• Experience in establishing and reviewing sanitation and safety standard.

• Experience with plan developing for an emergency provision of meals (During power outage, disturbance, or other disasters).

• Experience with food preparation, nutrition, and/or quality assessment/evaluation (including modified and/or medically restricted diets)

SPECIAL REQUIREMENT(S):Wisconsin Food Manager Certification must be completed and obtained within six months of employment. Approved training course included: ServSafe (SS) Examination, by the Educational Foundation of the National Restaurant Association.

Must have the ability to work up to 14 hours per day and more than 40 hours per week on any shift based on daily operational needs, this may include weekends and holidays
