Job Description

Summary

The Food & Beverage Manager supports Element 47 (E47), Bar and Living Room to ensure successful day to day operation and duties include oversight of the hotel restaurant reservations department, Forbes Standard focus and training support, inventory and supply ordering management. In absence of other managers, the F&B Manager will assist in oversight and shift coverage of the Bar, Living Room and In-Room Dining. The F&B Manager is also responsible for F&B activations, assisting with annual budgeting, payroll accuracy, menu printing, staff training and creating excellent guest experiences.

The budgeted salary range for this position is $70,000-$90,000. Actual pay will be dependent on budget and experience, all of our salaried roles are eligible for bonus.

Essential Job Functions

  • Provide support to the Director of Fine Dining and E47 AM and PM Managers

  • Oversight and management over the F&B reservations department

  • Communicate with Executive Chef or Chef on Duty concerning reservations timing, special requests and holiday settings

  • Create standards and training materials for the Reservations team

  • Send out weekly guest comments via Resy in an analytical way to track concerns and review those in weekly F&B meetings

  • Collaborate with the Director of Fine Dining on support needed to assist with the growth and mentoring of Element 47 Managers and Assistant Managers

  • Work with Training Manager to identify necessary staff development and prioritize Forbes standards training and ongoing engagement with staff

  • Is a Forbes champion for the department and work with E47 managers to enliven the standards daily

  • Participate in weekly meetings with management team to communicate information and improve on service steps, standards, training materials and departmental and property wide communication

  • Work with E47 Manager to solidify service standards and hotel standards

  • Ensures staffs appearance is impeccable at all times and follows established grooming policy

  • Support Restaurant Managers to develop staff that may be slow to pick up standards by engaging in additional training activities

  • Support Restaurant Mangers to further develop team members that are excelling and have potential to grow

  • Assist in development of procedures, operating criteria for E47

  • Conduct food, wine, spirits, cocktail training on a monthly basis with line staff

  • Provides support and oversight to all meal periods based on volume levels

  • Owns all special F&B activations per direction of F&B management

  • Assist in maintenance and cleanliness of restaurant, bar and service areas

  • Assist with beverage inventory management and create and execute ordering standards and procedures for E47, Bar and Living Room

  • Anticipate and oversee China, Glass, Linen and Silver inventory and needs to ensure staff has sufficient supplies

  • Create and manage purchase orders for all supplies needed

  • Assists outlet managers in compiling Tip sheets for hourly employees as needed and work with department managers to resolve payroll errors to ensure all employees are paid correctly

  • Maintain high level of guest satisfaction, makes immediate corrective action when guests' needs are not met and report guest incidents or requests in Alice immediately so hotel management is aware

  • Represent Element 47 at department head and F&B meetings

  • Collaborate with F&B Director, Assistant F&B Director and Director of Fine Dining to plan and execute special holidays and functions

  • Ensure Resy is constantly updated and maintain contact with the reservations team to maximize covers

  • Assist E47 Restaurant Manager with use of "Hotel Effectiveness" to ensure labor budget is consistent.

  • Supervise the care of equipment, minimizing waste, breakage and misuse

  • Drive innovation based on industry trends to maximize business levels in all meal periods

Qualifications

  • College degree preferred

  • Five years of experience in fine dining establishment

  • Five plus years management experience

  • Extensive cocktail and wine knowledge

  • Knowledge of food and cooking methods

  • Ability to work well with people

  • Strong organization and supervisory skills, superior multitasking abilities

Supervision Given and Received

Given: Exercises general supervision over F&B reservations staff. Assigns a variety of routine tasks, sets general expectations of results expected within company's policies and procedures. Responsibilities include but are not limited to, interviewing, hiring, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Received: Works under general supervision of Assistant Director of Food & Beverage. Receives continuing or individual assignments according to supervisor's directions and may perform routine tasks. Expectations of the quality, quantity and deadlines are clearly set. Instructions, advice and assistance available as needed. Work is reviewed on demand or during scheduled check-ins.

Work Environment and Physical Demands

  • Ability to be on your feet, kneel and bend for extended periods of time

  • Regularly work in adverse conditions and requiring the use of protective apparel/equipment to prevent exposure to the elements as well as an office environment and may be required to walk on slippery and uneven surfaces

  • Must be able to lift, push or pull occasionally up to 50 lbs. individually or with assistance
