Job Summary:

The Director of Food and Beverage is responsible for the day-to-day operations of Grand Canyon Railway Food and Beverage Department to include Fred Harvey Restaurant, Spenser's Pub, the Commissary Kitchen, employee, and other special events.

Responsibilities

Responsibilities:

  • Fully understand and support Xanterra's Mission Statement Core Values, and culture pillars. • Establishes and maintains a positive overall tone of the operation by communicating expectations to the Food and Beverage supervisory team and hourly employees.• Schedules and encourages regular team building events for management and employees. • Oversees Fred Harvey Restaurant, Spenser's Pub, Commissary operations, employee events and banquet functions. • Exceeds budgetary goals by maximizing sales, monitoring and reacting to payroll, and food costs daily, and maintaining adequate supplies of "other expense" items.• Works with Back of House Management to maintain appropriate par levels of all inventory items.• Maintains established standards of sanitation throughout the operation.• Understands company standards and know the job description of each staff member in the F&B Department. • Ensures that standards are upheld, and staff members work according to their respective job descriptions.• Holds weekly staff meetings with the management and supervisory staff.• Maintains and projects a positive, professional attitude and appearance always.• Works with management to ensure all required training is completed and documented for all personnel. • Enforces of all Xanterra and GCR F&B policies and procedures.• Ensures that correct action procedures are adhered to, especially concerning correct handling of written actions and follows up with management on all reports of disciplinary violations. • Ensures the management team maintains the highest level and accurate cleaning schedules to ensure cleanliness for all units. • Ensures management maintains and updates proper side worksheets for service staff. Develops and enforces weekly cleaning schedule to address necessary housekeeping items. • Ensures quarterly (non-food) inventories are counted to maintain sufficient par levels of all small wares, china and silverware for proper service. • Ensures spending for all line-item expenses is within the budgeted plan. • Schedules staff to meet labor budget and meet guest demands.• Maintains daily maintenance and audits of Kronos to ensure that Kronos is verified by Pay Period End. • Communicates with the Sales and Marketing Office to prepare for all BEO functions. • Organizes and oversees any special event functions. • Ensures F&B staff members are properly trained in TIPS and Serv-Safe Certified as needed within appropriate timeframe of being employed. • Checks cost control reports.• Develops food and alcoholic beverage menus to meet planned EBITDA.• Follows proper accounting procedures for checkouts, voids, and comps. • Communicates with the General Manager and Director of Resort Operations regularly. • Other duties as assigned.

Qualifications

Minimum Qualifications:

  • Five years of management experience in large-scale, high-volume restaurant operations.

  • Previous experience conducting financial analysis of P&L reports, and annual financial plans.

  • Proficient in PC software programs including Microsoft Office, Word, and Excel.

  • Must possess a valid/clear Arizona Driver's License and be able to comply with Xanterra/GCR Vehicle policy.

Preferred Qualifications:

  • Previous experience as a Food & beverage Director.

  • Preferred - bachelor's degree in hospitality management or similar field(s) of study.
