Scope of Position

The Food and Beverage Operations Manager is responsible for providing and creating, a fun, exciting and profitable restaurant and beverage environment. Responsibilities include the successful execution of service related operations within the established operational standards.

DUTIES AND RESPONSIBILITIES:

The following are examples only and are not intended to be all inclusive or restrictive; other duties may be assigned as necessary.

Essential Functions

Supervisory Responsibilities

Supervises day-to-day activities; provides training, planning, assigning and directing work; interviews and hires; appraises performance, rewards, and disciplines employees; corrects and approves time cards, schedules time off, and posts shift bids; and addresses complaints and resolves problems.

Other Responsibilities

  • Performs all functions in accordance with applicable Tribal, Federal and other laws and gaming regulations and Kickapoo Lucky Eagle policies and procedures.

  • Ensures the highest possible standards of guest service are provided and listens and responds to guest and employee concerns and questions.

  • Ensures that all food and beverage products served meet the established specifications and standards.

  • Tracks employee cash variances, and ensures wage deductions are made, in accordance with policies and procedures.

  • Ensures the proper level of service is provided based on forecasted need.

  • Ensures the proper level of service is provided based on forecasted need. Works closely with other Food and Beverage management to ensure proper staff & management coverage is present at all times through effective, methodical scheduling and planning.

  • Completes required daily and weekly checklists and reports.

  • Works with the Finance and IT Departments to ensure that all revenues are captured and reported accurately.

  • Executes and audits front of the house food supply and cigarette inventory, cost control systems, and processes.

  • Analyzes and evaluates Food and Beverage Department profits and loss statements and makes recommendations as to alternate courses of action.

  • With the Director of Food and Beverage, Manager, Assistant Managers and Chef direct the Inventory Clerks in matters pertaining to the purchase of products.

  • Responds immediately to any guest complaint to ensure that corrections are made and that 100% guest satisfaction is met.

  • Maintains a clean, sanitary, safe and comfortable work environment for employees and guests; creates a positive work environment that fosters harmony and growth.

  • Ensures that all service equipment is operated safely and with reasonable care, reporting mechanical problems to the proper department for repair.

  • Ensures that casino, property and departmental goals are identified, achieved and positive results are maintained.

  • Through coaching, teaching and training, leads restaurant department personnel in the proper performance of their duties; leading by positive example at all times. Documents these actions as necessary.

  • Sets performance expectations and provides coaching and operational support of the staff.

  • Responsible for coordinating the responsibilities of the Assistant Managers, Supervisors and other leadership positions within the front of house and beverage operations.

  • Attends and satisfactorily completes all required training as assigned and required.

  • Manages and maintains security of confidential information entrusted to position.

  • In-depth knowledge of restaurant front of the house operations and good working knowledge of kitchen operations.

Work Environment

  • While performing the duties of this job, the employee is frequently exposed to smoke, toxic materials, air contaminants, noise, and temperature extremes.

  • The employee must be able to perform under pressure, concentrate for a prolonged periods and able to work long hours under stressful conditions.

  • The employee may be exposed to the risks associated in attempting to resolve issues with difficult guests and extremely irate staff members.

An individual must have the following job availability to perform one or more essential functions of this position.

  • Flexibility: The employee may need to work nights, weekends, holidays and/or extended hours if required.

Travel

Traveling may necessary to perform one or more essential functions of this position.

REQUIRED ENTRY CRITERIA

Education and Experience

  • High school diploma or GED.

  • Four year college degree and/or a minimum of five (5) years operational experience in free standing restaurant, casino restaurant or a buffet type operation.

Other Criteria

  • Must be at least 18 years of age.

  • KTTT Gaming Commission Gaming License, including successful completion of background check necessary to obtain and maintain License. Responsible to keep all documents current and valid at all times.

  • Must be able to provide authorization to work in the United States.

  • Must have access to reliable transportation to commute to and from work.

PREFERRED ENTRY CRITERIA

Education and Experience

  • Degree in Hotel and Restaurant Management, BA or BS, or related field.

  • Up to date with food and beverages trends and best practices

  • Mastery in delegating multiple tasks.

Other Criteria

  • Native American preference is observed.

VIEW JOBS 11/6/2018 12:00:00 AM 2019-02-04T00:00 Reports to: Director of Food & Beverage Job Summary: The F&B Training Manager is responsible for the development and implementation of training strategies, plans and processes that support food and beverage departmental goals relative to continuously increasing team knowledge, skills and abilities and capabilities. The position proactively assesses the F&B training and development needs on an ongoing basis and initiates programs to address the identified needs. Essential Functions: * Ensure compliance with the applicable Tribal, Federal and other laws and gaming regulations and Kickapoo Lucky Eagle policies and procedures. * Ensure the highest possible standards of guest services by properly listening and responding to guest and team member concerns and questions. * Conduct annual training and development needs assessments for the department. * Build and update training and development programs and resources by securing existing training programs, creatively design programs and supporting materials. * Propose training and development programs and objectives that exemplify the desired culture and philosophies of the department as well as those that meet regulatory compliance requirements. * Modify training programs and/or objectives based on business need, industry trends, etc. as needed. * Develop training budget as part of the overall F&B budget and monitor spending against budget. * Obtain and/or develop effective training materials utilizing a variety of media and delivery methods in consideration of different learning styles and multi-language challenges. * Maintain current knowledge about training and development's best practices for self and the training and development staff. * Train and coach managers, supervisors and others involved in team member's development efforts including implementation of train-the-trainer methods as appropriate. * Maintain training and development records for all team members and ensure they are placed in the appropriate team member files. * Design and conduct appropriate follow-up studies for all completed training and development activity. * Design measures for indicating the effectiveness of training and development programs. Quantify the return on investment. * Design and implement recognition programs for team members who successfully complete training and development programs. * Manage and maintain security of confidential information entrusted to position. * Attend and satisfactorily complete all required training as assigned. * Monitor compliance with Federal currency transaction reporting requirements, Title 31 requirements and IRS Currency Transaction Reports and property established Anti-Money Laundering policies.
