Basic Function: Supervise and administer the front of house of food and beverage department. Ensures that a high level of consistent guest service is achieved and maintained. Develops and implements revenue enhancement programs. Monitors department expenses in compliance with the operating budget. Ensures that all front of house Food and Beverage employees are well informed of departmental goals and objectives and that all employee related issues are resolved in a timely manner.

Work Performed:

  • Supervise all front of house food and beverage areas to insure compliance with resort management objectives and the health and safety of employees and guests.

  • Supervise training programs, merchandising and quality cost control of the entire food and beverage department.

  • Participate in the interviewing, hiring and performance evaluation process of all service staff and supervisory personnel.

  • Observe safety and legal requirements as to health and labor department requirements.

  • Supervise the maintenance and upkeep of all front of house areas and service stations.

  • Supervise inventory control and purchase of food and beverage equipment and product.

  • Devise new approaches to increase food and beverage business and revenue.

  • Develop and implement service standards to ensure a consistent guest experience at a high quality level.

  • Ensure that all departmental work schedules are in compliance with staffing guidelines and that staffing levels are sufficient to provide service in accordance to company staffing guidelines and operating budget.

  • Other projects as assigned by Director of Food and Beverage Outlets.

Supervision Exercised:

Outlet Managers, Restaurant Supervisors, Bartenders, Servers, Server Assistants, Food Runners, Room Service Attendants, Host(ess), and any other restaurant team members

Supervision Received: Assistant Director of Food and Beverage

Responsibility & Authority:

  • Must interact with customers and all the times represent the best interest on the Tides Inn

  • Collect and input CRM information to build database with the objective to provide for a high level of personal service.

  • Must practice the 10-5-3 rule as Resort policy.

  • Complete knowledge of Food & Beverage outlet operations including foods, beverages, supervisory aspects, service techniques, and guest interaction.

  • Considerable skill in math and algebraic equations using percentages.

  • Ability to walk, stands, and/or bends continuously to perform essential job functions.

  • Ability to lift up to 40 lbs., and to lift lighter objects overhead.

  • Ability to communicate in English, both orally and in writing with guests and other team members, some of whom will require high levels of patience, tact, and diplomacy to defuse anger and to collect accurate information and to resolve problems.

  • Ability to work under pressure and deal with stressful situations during busy periods.

  • Ability to deal effectively with all departments, regular communication with the Director of Food and Beverage Outlets and all F&B Leaders.

  • Responsible for assisting Director of F&B Outlets in sourcing, inventory and control of china, glass, silver, linen and all other food and beverage equipment.

  • Maximize food and beverage profitability; achieve budgeted revenues and control expenses and budget of food and beverage department.

  • Business contact with clients, purveyors, colleagues in other resorts, health and fire officials.

Minimum Requirements:

Any combination of education and experience equivalent to graduation from high school or any other combination of education, training or experience that provides the required knowledge skills and abilities. High school diploma required. College degree preferred. Position requires 3-5 years previous Food & Beverage and supervisory experience. Due to the cyclical nature of the hospitality industry, full flexibility to accommodate varying schedules to reflect the business needs of the hotel.
