The Executive Steward is responsible for managing and directing stewarding operations to ensure designated food and beverage outlets have necessary supplies and equipment in the hotel's continuing effort to deliver outstanding guest service and financial profitability. This position will also be responsible for maintaining the kitchen and surrounding areas in a clean and sanitary manner by following the cleaning schedules and adhering to Health & Hygiene Regulations and Performance Hospitality's policy and procedures. The Executive Steward provides direct support to the Director of Food and Beverage and Executive chef on keeping the kitchen, banquet and food and beverage storage areas clean and organized, while maintaining par stocks and accurate inventories of operational equipment in all food and beverage division.
Inventory management, maintenance of sanitation and cleanliness standards, systems management, budget and forecasting, health inspections, safety initiatives, report generation, department management, meeting participation and facilitation, implementation of policies and procedures, cost controls and overall profitability.
Scheduling and managing the stewarding team, creating schedules, and assigning various duties to the team.
Support the banquet team during different functions held at the hotel; organize the equipment and assist the banquet team before and during the events.
Maintain a clean and organized work environment.
Responsible for the proper sanitation and cleanliness of the kitchen and food preparation area, including ovens, grills, stoves, hoods, fryers, preparation slicers, steam kettles, tables and floors.
Assist the culinary team with special request or priorities as requested by management.
Oversee equipment storage and distribution according to established standards.
Maintain chemicals in proper storage as well to maintain proper par stocks and usage. Cleaning and sanitizing all china, glassware, silverware, flatware, pots and pans in the hotel.
Monitor and develop team member performance to include, but not limited to, providing supervision and professional development, scheduling, conducting counselling and evaluations and delivering recognition and reward Recruit, interview and train team members.
Ensure compliance with health, safety, sanitation and alcohol awareness standards and prepare for health inspections
High School Diploma or equivalent with a minimum of three (3) years of prior experience.
