Job Summary

Working as anExecutive Chef, you are responsible for overseeing all culinary functions for auniversity dining account. You will manage and lead a team of associates and oversee all safety and sanitation as it pertains to the account. Additionally, as part of the culinary team, you will be responsible for the following:

Key Responsibilities:

  • Plans regular and modified menus according to established guidelines

  • Follows standarized recipes, portioning and presentation standards. Completes and utilizes daily production worksheets and waste log sheets. Tastes completed meals to ensure quality.

  • Trains kitchen staff infood preparation, safe handling, operation and equipment, food safety and sanitation based on company and regulatory standards.

  • Establishes and maintains cleaning and maintenence schedules for equipment, storage and work areas. Ensures that kitchen staff follows and completes schedules as assigned.

  • Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed.

  • Makes all decisions regarding utilization of leftover products staying within company guidelines for such products.

  • Complies with federal, state and local health and sanitation regulations and department sanitation procedures through local health department and third party audits.

  • Participates and attends departmental meetings, staff development, and professional programs, as appropiate.

Preferred Qualifications:

  • B.S. Degree in Culinary Arts, Food Services Technology or related field; or A.O.S. Degree in Culinary Arts or cilinary certificateand required experience.

  • Minimum of 3-5 years of progressive culinary/kitchen management experience, depending upon formal degree ortraining.

  • Extensive catering experience a plus

  • High volume, complex foodservice operastions experience-highly desirable.

  • Institutional and batch cooking experiences

  • Hands on Chef experience a must.

  • Comprehensive knowledge of food and catering trends with focus on quality, production, sanitation, food cost controls and presentation.

  • Must be experiencedwith computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-Mail and the internet.

  • ServSafe certified highly desirable.

Job Description To provide technical assistance to the Executive Chef and ensure efficient, effective operation of the kitchen and food production outlets. Responsibilities * Responsible for the execution of all Omni Hotel and company policies/procedures, ensuring that all services provided achieve the established standards within the agreed budgetary controls * To assist the Executive Chef in budgeting i.e. food cost/payroll/etc. When agreed, control all overheads/achieve food cost budget throughout the oncoming year/report all variances from actual budget with the reasons and recommendations for remedial action * Advise the Executive Chef on all matters relating to the kitchen area and ensure a high standard of cleanliness and hygienic practice throughout the kitchen * Ensure guest satisfaction with the smooth and effective running of the day-to-day operation. * To maintain control of the standards for purchasing and receiving items * Work closely with the storeroom manager and food and beverage controller to establish and maintain control of the standards for purchasing and receiving items * To test and evaluate products for quality, paying particular attention to yield/holding qualities/market price/wastage usage of leftovers * Constantly inspect all food service sections during service time to ensure that the correct standards are maintained * Responsible for control of equipment and scheduling maintenance Qualifications * Customer Service, prior admin experience preferred * Associate's degree or higher preferred in Culinary Arts * Knowledge of Microsoft Word, Excel, Delphi or similar programs. * Excellent organizational skills * Clear, positive, energetic communication skills * Minimum 5 years at an Executive Sous Chef or Sous Chef level management position of a 4 star establishment or higher * Must have an unexpired Serv Safe certification * Must be able to stand for 8+ hours per day * Flexible scheduling to include nights, weekends, and holidays Omni Hotels & Resorts is an equal opportunity employer - vets/disability.
