Desired Qualifications of the Executive Chef:

  • Incorporates safe work practices in job performance.

  • Completes market lists; orders all necessary items and inspect such foods as meat, fish and vegetables received from markets.

  • Develops standard recipes for all dishes to ensure proper portion control, uniformity of taste and quality; test new products on the market, recipes and formulas.

  • Direct Supervision and involvement of food preparation, cost quality, quantity inventories, portion control menu planning, recipes and daily specials; assist in planning monthly kitchen budget.

  • Assists line cooks during peak hours.

  • Assists with interviewing and hiring of applicants for employment; along with training program; and assist with the set up work schedules and job requirements.

  • Develops new cooking methods for improvement of cuisine; maintain contact with other chefs and visits other kitchens to keep abreast of new development of food and equipment.

  • Assists in preparing inventories, budget forecast and may revise work schedules for each week; report on daily payrolls overtime, absenteeism and accidents.'

  • Works with other departments to coordinate special functions and outings. Regular and reliable attendance.

Other Qualifications:

  • Must have Food Safety and Sanitation Training.

  • Possesses knowledge of accepted sanitation standards and applicable health codes.

Minimum Qualifications for the Executive Chef:

  • AA degree / Culinary degree. Two years' experience as Exec Sous and/or Exec. Chef.

They're the guardians of our Food &amp; Beverage program, bring our menus to life, keep standards high, and manage their kitchens efficiently.</p><p>Here is a sneak peak of the Chef/ Kitchen Manager's purpose:</p><ul><li>LEAD BY EXAMPLE • Cook on certain days</li><li>EMBRACE THE MENU • Adhere to the company's mandated F&amp;B menu and purchasing programs</li><li>KEEP AN EYE ON THE NUMBERS • Maintain budgeted food costs, labor, supplies, as well as make appropriate adjustments</li><li>PLAN LIKE A PRO • Estimate food consumption and make purchases as appropriate from our specified food program; schedule staff efficiently to accommodate shifts in business volume</li><li>ASSEMBLE AN ALL-STAR TEAM • Work with the community management to recruit, hire, train, and retain a rock star kitchen staff</li><li>COMMIT TO QUALITY • Ensure that our product quality, freshness, and presentation are always at company standard; supervise and oversee the preparation, portioning, garnishing, and storage of all food</li><li>KEEP IT CLEAN • Facilitate and manage all kitchen equipment maintenance and implement/conduct sanitation audits and cleaning schedules in order to comply with all local Department of Health (DOH) regulations.</li><li>COOKING WITH FLARE • Show off your cooking skills with cooking demonstrations.
