Working as a Senior Executive Chef will allow you the opportunity to work with GREAT people like yourself! The purpose of this job is to lead culinary operations in all areas of a unit insuring on trend, efficient, safe and sanitary food production. The Senior Executive Chef serves as the department head for culinary operations with in a unit/operation. Oversees kitchen operation and supervision of staff while maintaining a safe and sanitary work environment. Prepares or directs preparation of meals in accordance with corporate programs and guidelines.
Duties and Responsibilities:
Prepares or directs preparation of all food by the BOH culinary staff.
Responsible for people management to include hiring, coaching, counseling, training and developing.
Duties also include menu development, inventory, purchasing, labor and food cost controls, maintaining sanitation standards, include food production for cafs, retail operations and catering functions.
Responsible for handling, preparation and storage of perishable products.
Completes and utilizes daily production worksheets and waste log sheets.
Conducts daily meetings with team members.
Trains BOH staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on RA standards and regulatory standards.
Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas.
Ensures that BOH staff follows and completes schedules as assigned.
Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed.
Plans and prepare menus for special events as may be requested by the Client.
Participates and attends departmental meetings, staff development, and professional programs, as appropriate.
Participates in meetings where department goals are established and implements assigned action plan to achieve expected outcomes.
Completes all daily, weekly or monthly reports as outlined in the corporate policies and procedures on a timely basis meeting all prescribed deadlines.
Projects and practices consistent ownership attributes, which provide a high level of customer service at all points of contact.
Additional responsibilities include but not limited to the following:
Participate in employee meetings and training programs
Conduct safety, sanitation and maintenance programs
Maintain food cost while ensuring quality standards
Maintain an active role in managing team developments
Manage purchasing and inventory controls
Performs related duties and special projects as assigned
Degree in Culinary Arts is preferred or equivalent professional experience
5+ years demonstrated progressive culinary management experience
Must possess at least 5 years in menu development
Self-starter, innovative and ability to multitask
Maintain a positive attitude under pressure and motivate team
Must be knowledgeable on HACCP controls along with proper storage and use of food
Knowledge of budgets, labor costs, inventory controls
Strong leadership, coaching and training skills
Must possess a passion for excellence
Computer skills: proficient in Microsoft Office
Excellent verbal and written communication skills
Ability to lift, bend and carry up to 40 lbs.
Knowledge of safe and sanitary food handling principles
Conformity to the highest standards of personal integrity and ethical behavior
ServSafe or Department of Health certification a plus
