We are seeking a dynamic Executive Chef to lead our Inpatient Central Kitchen culinary team in the Food and Nutrition Services Department at Rush University Medical Center!

This is a Full Time position
80 hours every two weeks, benefit-eligible

Position Highlights

Manages the menu and food production to meet revenue, expense and customer satisfaction targets. Coordinates with the managerial team on activities to ensure operational continuity and service standards. Ensures food production compliance with all applicable regulatory agencies, department quality monitors and targets and corporate and departmental policies and procedures. Principal Responsibilities

  • Develops and implements menus, recipes and service concepts for assigned units.

  • Manages all food production for unit.

  • Establishes implements and maintains department service standards for quality products and food safety.

  • Maintains and utilizes computerized systems to manage production data.

  • Develops, implements, and analyzes appropriate inventory tracking, quality control measures and quality initiatives.

  • Manages production supervisor(s)/cooks/ingredient control. This includes hiring, training, counseling, performance appraisals and disciplinary action.

  • Department liaison for preventative maintenance, pest control, and equipment repair in the unit.

  • Monitors department procurement activities to ensure efficient utilization of resources.

  • Meets customer and corporate foodservice related satisfaction standards.

  • Meets budget targets through menu and recipe development.

  • Develops, implements, analyzes appropriate quality control, (i.e. food quality and temperature) measures for food production.

  • Ensures compliance with all regulatory agency standards and all departmental and organizational policies and procedures.

  • Ensures compliance with all departmental requirements for in-service training, employee orientation and training, timely completion of performance appraisals, and timely submission of department reports.

  • Collaborates with managerial team in the department to ensure that department goals are accomplished

  • Manages department projects as assigned

  • Attends and contributes to departmental meetings.

  • Precepts dietetic interns during management rotation.

  • Implements programs and services that support the Mission, Vision, and Values of the medical center.

Position Qualifications Include

Knowledge, Skills, and Abilities

  • Degree in Culinary Arts with training in Food Systems management or Hospitality Management or equivalent experience

  • Illinois Department of Public Health and City of Chicago Sanitation Certification required within nine months of hire

  • Food Allergen Certification

  • Competent in preparation of spreadsheets, data bases, word processing

  • Minimum of five years experience in senior management of a complex food service facility

  • Proven financial responsibility

  • Proven ability to manage financial targets of revenue and expenses

  • Self-directed

  • Strong interpersonal skills

  • Organizational skills

  • Problem identification and solving,

  • Creative

  • Manage stress effectively.

  • Ability to exert 25 pounds of effort to push or pull a cart

  • Ability to lift and carry 40 pounds minimum, stooping, kneeling, reaching,

  • Sufficient dexterity to operate kitchen utensils and computer keyboard,

  • Able to communicate using a variety of audio-technology

  • Able to see

  • 50% of time sitting, 50% of time standing or walking.

The desired candidate will have the ability to multitask effectively. This is a Full Time position 80 hours every two weeks, benefit-eligible Position Highlights: Supervises daily foodservice operations to ensure that goals and standards of unit/department are met. Ensures compliance with all applicable regulatory agencies, department quality monitors and targets and corporate and departmental policies and procedures. Exemplifies the Rush mission, vision and values and acts in accordance with Rush policies and procedures. Position Responsibilities: * Implements menus, recipes, and service concepts for unit. * Supervises daily food production or service operations as assigned. * Ensures that service standards for aesthetic presentation and safety of food are met. * Utilizes CBORD and computerized systems to manage data. * Supervises foodservice employees. This includes orientation and training, employee counseling and disciplinary action. * Provides input into employee's annual performance appraisal. * Adjusts daily staffing to ensure appropriate personnel to complete all duties required by the unit. * Performs food and supply ordering functions as assigned. * Monitors time and attendance system for payroll. * Consults with Unit Manager/Assistant Manager regarding human resource issues (i.e. disciplinary actions and performance appraisals). * Meets customer and corporate foodservice related satisfaction standards. * Performs unit quality control measures, identifies problems or deficiencies, assist in development of and implements corrective action. * Ensures compliance with all regulatory agency standards and all departmental and organizational policies and procedures. * Ensures compliance with all departmental requirements for in-service training, employee orientation and training, and timely submission of department reports. * Assists unit manager, assistant manager to ensure that department goals are accomplished. * Orients/works with dietetic interns, as assigned. * Completes department projects, as assigned. * Conduct employee meetings, as assigned. * Attends and contributes to department meetings. Position Qualifications Include: Knowledge * Associate Degree in Food Service or a high diploma and a minimum of three years of experience in a supervisory capacity in foodservice operations (retail, business, and healthcare) required * Illinois Department of Public Health and City of Chicago Sanitation Certification required within six months of hire. * Experience as a Sous/Executive Sous Chef preferred * Competent in preparation of spreadsheets, databases, and word processing.
