Responsibilities

JOB SUMMARYThe Executive Chef is responsible for all food production in terms of quality, presentation and cost for all food outlets, banquets and bakery.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Assists in the development and management of the budget for all F&B outlets.

  • Trains and manages the staff to efficiently produce high quality food in a safe and efficient manner.

  • Controls food cost by establishing purchasing specifications, storeroom systems, product storage, portion control, and waste management.

  • Ability to solve complex problems, and function efficiently under timelines and pressures.

  • Oversees the hiring, training and evaluating of kitchen staff.

  • Other duties as assigned.

KNOWLEDGE, SKILLS & ABILITIES

  • 7+ years of culinary experience with 3+ years of management experience preferred.

  • Culinary Degree preferred.

  • Sound working knowledge of high volume kitchen production.

  • Knowledge of sanitation laws, health regulations, and applicable OSHA regulations.

  • Ability to obtain and maintain a valid state gaming license.

PHYSICAL DEMANDS & WORK ENVIRONMENT

  • Perform duties under pressure and in an interruptive environment.

  • Must be available to work a varied schedule, including weekends and holidays.

  • Must have basic computer skills

  • Able to stand for long periods of time.

  • Frequent pushing, pulling, bending and lifting.

  • Work environment may include variable temperature, lighting and noise levels.

Recruit, hire, and provide orientation/training for a sufficient number of qualified staff to carry out facility programs and services Maintain and guide the implementation of facility policies and procedures in compliance with corporate, state, federal, and other regulatory guidelines. Prepare and submit reports on facility operation, as required. Requirements for this dynamic opportunity include a current, unencumbered Nursing Home Executive Director's (Administrator) license of this State. Must possess proven leadership ability with at least three (3) years as an administrator in either a long-term or subacute care facility.
