PRIMARY PURPOSE:

Join our celebrity chef, Michael Mina, at ORLA, famed for its vibrant and authentic dishes that epitomize the spirit of Mediterranean cuisine. Here, you will create an unparalleled dining experience that fuses traditional flavors with contemporary culinary creativity. We are in search of a highly talented and inventive Executive Chef to head our culinary team. The ideal candidate will possess a fervent passion for Mediterranean cuisine, outstanding leadership skills, and a demonstrated history of success in upscale restaurant settings.

THE DAY-TO-DAY:

  • Culinary Expertise: Create, refine, and perfect a diverse range of Mediterranean dishes that reflect the rich and varied culinary traditions of the region. This includes appetizers, mains, and desserts, with a particular emphasis on using fresh, high-quality ingredients and authentic recipes.

  • Leadership and Management: Own, lead, and oversee daily kitchen operations, including fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and the development and execution of menu strategies to ensure both short-term and long-term profitability.

  • Operational Excellence: Execute policies, operating procedures, pricing initiatives, training programs, directives, menus, rules, and regulations for the commissary staff. Ensure the highest standards of health, sanitation, and cleanliness in all kitchen areas.

  • Guest Interaction and Quality Control: Interact with internal and external guests to ensure satisfaction and product quality. Address and act on guest feedback and complaints appropriately. Collaborate with divisional Directors, Executive Chefs, and the kitchen team to ensure seamless product delivery, including adherence to time standards, recipe specifications, and quality.

WHAT YOU WILL NEED:

  • Bachelor's degree in a related field, or equivalent experience.

  • Two (2) or more years of prior relevant experience.

WHAT WILL MAKE YOU STAND OUT:

  • Previous experience managing employees under a collective bargaining agreement.

  • Previous experience working in a Mediterranean restaurant.

  • Previous experience in a luxury or fine-dining restaurant.

  • Complete knowledge of health and safety regulations.

  • Knowledge of all products, menu items and equipment used to perform these duties.

  • Able to lead and mentor a team.
