Summary:
The Executive Sous Chef oversees the daily kitchen operations, including inventory management, ordering, training, kitchen safety & cleanliness. Lead kitchen operations for the Sous Chef and kitchen team.
Responsibilities:
Train Sous Chef and kitchen team on inventory, ordering, scheduling, menu development, cost controls, and ongoing coaching and feedback.
Schedule team to ensure restaurant is staffed correctly.
Work all stations in kitchen to assist team during peak times to maintain service and quality.
Ensure a positive and creative team environment for the back of house team
Facilitate open communication with the supervisors and staff as well as management staff
Perform interviews, hire, disciplinary, and termination actions when necessary for team members
Ensure all equipment is maintained, and staff is properly trained.
Train and monitor Team Member's performance to ensure proper food preparation, sanitation, and safety procedures are executed.
Ensure teamwork and synergy exists between the front and back of house staff through proper communication to ensure smooth service and kitchen operations
Ensure compliance with state, federal, local and company health, safety, sanitation, and alcohol awareness standards
Experience:
4+ years in high volume kitchen experience
2+ years in kitchen management
Strong knowledge of Food, Beverage, and Labor Cost Controls
Knowledge of Microsoft Office Suite, restaurant POS system, inventory management and/or procurement software experience, payroll and timekeeping software, business & accounting software may be required
Must be able to lift/push/pull 50lbs frequently
High School Diploma
Strong understanding of food safety standards
Able to stand for long periods of time (10 - 12 hours)
Able to tolerate extreme heat
Ability and willingness to work flexible hours including weekends, holidays and late nights
Able to work in a fast-paced environment
