Copeland Oaks, a not-for profit Continuing Care Retirement Community located in Sebring OH, is looking to fill our Executive Chef position. The Executive Chef designs, supervises, coordinates, and participates in activities of cooks and other kitchen personnel. The Executive Chef Matters as he/she is recognized for his/her culinary expertise, expertise in long term care and is a trainer to cooks within the facility.

Essential Functions:

  • Develop recipes and plan menus.

  • Implement and train staff to meet the standards issued by the Ohio Food Code.

  • Supervise cooking staff and other kitchen staff and complete performance management functions such as scheduling, evaluations, discipline, hiring and termination.

  • Oversee the purchase of food, monitors and controls inventory to established levels.

  • Establish productions levels and inventory controls.

  • Oversee food production and quality control of products served.

  • Manage and control food cost and offer solutions to food cost control issues.

  • Cook selected items and prepare food for special events

  • Assist with the transition in dining service changes within the dietary department.

  • Partner with clinical staff to ensure the diets and textures for residents of Crandall Medical Center are implemented.

  • Encourage staff to seek continuing education to meet industry standards.

  • Any other duties as assigned by management.

  • Provide production relief for call off sick time and emergencies.

  • Uses and learns establish software for recipes menu management in resident production

  • Follows established production system in kitchen and develop plans for leftover reduction and usage

  • Conducts weekly meal rounds in all areas meeting with all levels of care

Professional Experience/Educational Requirements:

  • Technical, Trade or Vocational school degree in culinary arts or related field.
  • 2 years experience in food or culinary services
  • 2 year experience in food or culinary service supervision

Certification / Licensure:

  • Serv-Safe certification or CFPP
