Sodexo is seeking an Executive Chef 2 in the Fort Lauderdale area for a Continuing Care Retirement Community.

Seeking an experience Chef, preferabley with healthcare or senior living experience. We are looking for an innovative Chef who keeps ahead of industry trends, possess the ability to implement and enhance programs and systems, strong communication skills, an ability to smoothly navigate from back to front of the house while effectively engaging with employees & Residents for outstanding training to produce amazing Customer Service outcomes. Position visits with the Residents during meal service and is actively engaged in community activities while overseeing catered events. This is a customer service driven environment for a dynamic individual with a passion for people and boundless energy for details that distinguish high service level standards second to none in the industry.

Your Skills checklist for this position:

Culinary Degree/Trade School Certificate and Servsafe Certificate

Health Care and Contract Food Service Management experience

Working knowledge of HACCP protocols for regulatory compliance

Food production, catering, and attention to detail

Experience; inventory management & on-line ordering for $1M in volume

Experience creating and developing menus/pricing

Skills to train & develop 15 plus employees; utility & food production

Ability to manage multiple and at times, competing priorities

Computer skills; food and labor management systems, Menu Graphics

Experience in restaurant style fine dining is ideal

Typical schedule ;10:30am-7:30pm with rotating weekends / holidays

Position Summary

Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution. Key Duties- Implements & coordinates the culinary function.

  • Directs & trains cooks & utility workers.- Ensures food preparation & production meets operational standards.- Manages catering & retail areas.- Customer & Client satisfaction.- Financial management to include food cost & labor management.- Manages food & physical safety programs.

Qualifications & Requirements

Basic Education Requirement

  • Associate's Degree Basic Management Experience

  • 2 years Basic Functional Experience

Purpose: Sous Chef is responsible for training, supervising and working with all cooks and culinary staff to prepare, cook and present food according to hotel standard recipes in order to create quality food products. Essential Functions: * Assign, in detail, specific duties to all employees for efficient operation of the kitchen. * Visually inspect, select and use only the freshest fruits, vegetables, meats, fish, fowl and other food products of the highest standard in the preparation of all menu items. * Read and employ math skills for following recipes. * Process requisitions for supplies. Adhere to control procedures for cost and quality. Ensure proper receiving, storage (including temperature setting) and rotation of food products to comply with health department regulations. * Select, train and supervise kitchen staff in the proper preparation of menu items. Schedule culinary staff so that proper coverage is maintained while keeping payroll costs in line. * Supervise daily cleaning of walk-in and reach-in boxes for safety reasons. * Maintain vacation schedule for proper staffing. * Report any equipment in need of repair to chef and engineering for service. * Perform other duties as necessary and assigned, such as V.I.P. parties and staff meetings. * Implement emergency training and procedures to ensure appropriate protection of the hotel, guests, staff and company assets. Qualifications: High School Diploma or equivalent; A degree from a post-secondary culinary arts program a plus. A minimum of two (2) years of experience as a Sous Chef in a high volume, upscale restaurant encompassing all phases of food preparation and kitchen operation a must.
