The Opportunity:

Four Seasons Hotel Chicago is looking for a creative Director of Food & Beverage, which forms part of the Hotel's leadership team who collectively make key strategic and operational decisions for the Hotel.

The Director provides leadership and management for the Food & Beverage Division ensuring thorough people development together with long-term growth and profitability of the department, division and Hotel.

As a member of Planning Committee this position is also responsible to assist with and make decisions that govern all aspects of Hotel operations. The Director will provide leadership and management for the Food and Beverage Division and integrate its functions in support of the hotel.

The primary responsibilities for this position are to ensure our guests receive the highest level of food quality and service, manage and develop a team, devise and monitor an annual budget, manage labor control and operating expenses and develop relationships with key suppliers and industry associates. The Director manages the Food & Beverage Operation which includes all Food & Beverage outlets.

In addition, the following knowledge, skills and abilities are required:

  • Passionate people developer who coordinates the selection, training, development, and evaluation of employees and managers in the Food & Beverage Division through effective management and leadership to ensure that established cultural and core standards are met.

  • Passion for food, cocktails, mixology - prior experience driving beverage programs in similar style hotel is essential

  • Ability to be present in local restaurant seen essential for the role

  • Solid understanding of kitchen dynamics, culinary experience throughout career or degree is essential in order to give clear direction to a team during the rebuild process

  • Keen eye towards controlling labor and operating expenses through effective planning, budgeting, purchasing decisions, policy making, and inventory control while focusing on creative cost control and revenue generation solutions to maximize profit in the division and hotel.

  • Dynamic and highly visible in the operation, recognizing and maintaining relationships with regular guests as well as cultivating relationships with new patrons through effective marketing and personal relationships with local community.

  • Strong collaborator who works closely with the Culinary and Beverage Team to design and implement menus, wine lists, and amenity options while ensuring excellent product, value for the consumer and appropriate Food & Beverage Costs.

  • Excellent communicator who works harmoniously with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation amongst departments to ensure a positive environment.

  • A product innovator! Creative and enthusiastic in exploring new products and services.

  • Complies with Four Seasons' Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact.

  • Works successfully with Hotel Manager, General Manager, and the remainder of the Planning Committee and Departments Heads to ensure overall hotel standards are maintained and executed from a Guest, Employee, and Financial perspective.

  • Strong EQ - relationship management is key for all stakeholders (internal, external, ownership and Four Seasons brand.

  • Attention to detail and ability to multitask.

  • The ability to react and adjust to changing business environments and lead the team in ensuring efficient financial management of the business.

  • Ability to work irregular hours, weekends, and evenings.

  • A creative and inventive leader who operates in a space where there is no box.

  • Requires reading, writing and oral proficiency in the English language

  • College degree preferably specializing in hotel/restaurant management or business administration, or equivalent experience is required.

  • Three to Five years previous experience in multiple food & beverage department head positions. Open to first time Director. Experience in innovating new concepts in different environments of outlets.

  • Some travel is required.

This position reports to the Hotel Manager, is part of the Planning Committee (hotel leadership team) and is a Division head role.
