Currently, we are searching for a talented Director of Catering to join the team of the Cheyenne Mountain Resort Colorado Springs, a Dolce Resort and who will be responsible for directing, coordinating, training and supervising the Catering Sales Manager/s and Meeting and Convention Services Manager/s. Manage all aspects of the Catering Sales operation; including the selling of all food and beverage functions, conferences and banquets. Devising signature events, amenities and setups that enhances the appeal to generate incremental revenue for the designated Hotel.

The Director of Catering is also responsible for coordinating, supervising and directing assigned group business after it is turned over by the sales department, throughout and through the closure of the event and subsequent financial aspects of the program, while maintaining profitable operations and high-quality products and service levels. He/She is expected to market ideas to promote business; reduce employee turnover; maintain revenue and payroll budgets; and meet budgeted productivity while keeping quality consistently high. He/She is also responsible for acting as a liaison between client and operating departments to ensure a successful meeting and to generate repeat business in accordance with the Wyndham Hotel Group policies and procedures.

ESSENTIAL FUNCTIONS:

  • Manage existing accounts and follow up with client re-solicitation to capture future business.

  • Respond to requests by Meeting Planners immediately.

  • Interact with outside planners, vendors for event set-up.

  • Maintain pricing integrity and propose upscale menus for clients.

  • Create, review and revise rooming lists and VIP lists.

  • Manage the Delphi or function book and adjust space in order to ensure maximum potential revenue.

  • Be visible on the floor and assist staff as needed during functions.

  • Respond to guest complaints in a timely manner.

  • Keep immediate manager fully informed of all problems or matters requiring his/her attention.

  • Work with F&B managers and keep them informed of F&B issues as they arise.

  • Prepare and submit required reports in a timely manner.

  • Know meeting room set-ups and capabilities.

  • Know sleeping room configurations and types.

  • Have comprehensive knowledge of all operational departments within the hotel; guest services, reservations, housekeeping, audiovisual, switchboard, accounting, restaurants, bars, and engineering.

  • Be involved in and/or conduct departmental and hotel training (One to One Customer Service Training, etc.)

  • Plan and execute holiday and special events in conjunction with the Catering Managers.

  • Use feedback from Meeting Planner evaluations to improve service and quality.

  • Coordinate all aspects of the ongoing implementation of the Wyndham Enrichment philosophy of service.

  • Ensure participation within department for monthly Wyndham Enrichment team meeting.

  • Focus team on their role in contributing to the Guest Service and audit scores

  • Conduct meetings according to Wyndham standards as required by management.

  • Manage the Business Center including Business Center Coordinators as needed to meet client needs and to maintain efficient and effective operations.

Individual is responsible for ensuring that booked events are in alignment with Selective Sell Guidelines (SSG) and property policies and procedures, while maintaining high standards of quality and efficiency. Maintaining optimum member and guest satisfaction and meeting or exceeding overall profitability objectives. POSITION QUALIFICATIONS FORMAL EDUCATION, MINIMUM KNOWLEDGE, TRAINING & WORK EXPERIENCE: * High school diploma or equivalent. * College degree preferred or equivalent work experience. * Working knowledge of a hotel, club or resort. * Six to eight years previous experience selling in the hospitality industry or related field. * High-end luxury wedding sales experience. * Highly developed communication skills. * Computer literate in Microsoft Word, Publisher, Delphi, Social Tables. ESSENTIAL FUNCTIONS: * Meet and/or exceed monthly, quarterly and annual revenue generation goals. * Act as liaison between the club, resort and the customer. Use empathy, listening skills, negotiation, creativity and product knowledge to deliver an extraordinary customer experience and assure that operations executes at an efficient and profitable level. * Thoroughly qualify the objectives and needs of event planning guests across all communication channels i.e. phone inquiries, electronic RFP's, walk-in inquiries, etc. * Develop complete understanding of club and resort services and capabilities and serve as a product expert. * Make suggestions, use creativity, bring in experts and brainstorm with the prospective client for how to turn an event into an unforgettable experience thereby enhancing revenues and delivering an extraordinary price / value experience. * SELL THE TOTAL CLUB & RESORT EXPERIENCE. Enhance revenues through catering food and beverage upsell, spa services, IHWC services, club memberships and recreational services, audio-visual, retail and meeting room rental. * Meet with prospective clients / brides to plan and confirm events, prepare contracts and assist with menu selection and pricing based on budget. * Facilitate a thorough and timely turnover of booked events to the event planning department in a manner which clearly articulates customer objectives, schedule of all events and any relevant communications to support the development of detailed group resumes and/or BEO's. Be sure that customer understanding of his/her schedule and the contract matches what is being held in Delphi. * When required, develop all BEO's and Group Resume information and effectively serve as the onsite event planning manager. * Understand the niche that weddings occupy within overall club and resort revenue equation. * Adhere to established guidelines for placement and booking social/wedding events. Always realize that they must integrate appropriately (and profitably) with conventions and conferences that traditionally require a high number of sleeping rooms. * Promptly and efficiently communicate social event / wedding changes in expedient manner. * Participate in sales meetings. * Participate in organizations / clubs to represent the company and further enhance stature as being the key contact and undisputed expert in the weddings market. * Make business development calls (outside calls, site visits and entertainment) to establish new business opportunities, convert existing opportunities and maintain relationships. * Complete approved number of prospect sales calls daily / weekly / monthly / quarterly / annually to support revenue goal achievement. * Ensure clear, orderly and accurate catering sales files and computerization (via the Delphi system) of such files are maintained. * Prepare catering contracts and proposals. * Follow-up on all function details with the Conference Services Manager (CSM) prior to file turnover. * Attend weekly sales meetings and if applicable BEO and Operations meetings. * Implement strategies targeting all premium social market segments, including the weddings market. * Maintain laser focus on developing new markets, increasing average check, upselling menu items and overall catering revenues. * Prepare post event reporting for all assigned events. * Correctly retaining records, files and logs in accordance with established procedures. * Act as liaison, maintain contact with and monitor the activities of outside vendors and officials that provide group service, i.e., destination management companies, audio-visual partners, retail, state liquor licensing and health officials, etc. * Serve as the leader of the catering sales team for the Garden of the Gods Collection. * Recommend profit improvements to Director of Sales & Marketing (DOSM), the Director of Sales and the Director of Food and Beverage. * Practice safety standards and report any unsafe conditions to the appropriate team member or Executive Committee member. * Remain alert, courteous and helpful to members and guests at all times.
