This position is responsible for implementing Food & Beverage Procedure on board the vessels and monitoring consistency and cost.

Overview of Role:

The Director of Food & Beverage Operation is responsible for a flawless and efficient Operation of Food & Beverage services and development onboard all Silversea vessels according to standards and policies directed by Silversea Executive team.

Key Responsibilities:

  • Assuring Guest Satisfaction onboard; monitoring comment card rating and NPS scores, ensuring targets established by Silversea are met.
  • Product evolution and standard development, ensuring flawless operational execution of new implementation and deployments within Food & Beverage.
  • Responsible for effective monitoring of food & beverage operating cost to ensure budget compliance, including F&B OPEX related cost as well as CAPEX budgets.
  • Yearly Fleet Budget and quarterly forecast preparation in liaison with Budget & Control and Procurement (OPEX and CAPEX)
  • Responsible for all Public Health Food & Beverage related operating policies & procedures according to Public Health rules issued by; United States, Canada, United Kingdom, EU, Brazil and Australia
  • Overseeing all F&B applications, correct usage on board and shore side, continuous development in liaison with IT.
  • Ensuring Food & Beverage departments onboard work schedule and duties are in compliance with International rules issued by ILO/MLC & ITF.
  • Supervising & Coordination with C&I, Sales, special services and ships regarding all F&B functions, Lunch/Dinner Visitors and Special Requests
  • Manage Wine program with SSC Wine Consultant and Purchasing Department
  • Manage and supervise Bar and Dining Room SSC training program and development
  • Manage Culinary Development and Execution.
  • Manage and coordinate with Purchasing department all Food & Beverage provisioning for all vessels
  • Collaborate for all New Building and Dry Dock projects.



Bachelor Degree in Hotel Operations from recognized University

Years of experience:

  • Minimum 3 years experience from Cruise Luxury/Premium market in Food & Beverage operations in a managerial position.
  • Minimum 5 years experience from a luxury hotel/restaurant operation in a managerial position.

Essential qualifications and skills:

  • Proficiency with Word, Excel and inventory management software systems.
  • Strong leadership, management and organizational skills.
  • Excellent interpersonal skills and ability to tactfully deal with internal and external contacts.
  • Must possess a positive, team-player attitude.

What You'll Do Create an exciting, innovative, and memorable dining experience for all guests. Lead a well-rounded and knowledgeable front-of-house team. Proper guest service requires a staff that is thoroughly trained in service etiquette, product knowledge, and makes every effort to meet the needs of each and every guest. Some of your responsibilities include: * Daily evaluation of restaurant service performance, coordination of timely food production. * Participates in evaluation of food products, kitchen employee performance, and development of products consistent with our market position. * Develop a selection and pricing strategy of all liquors and wines and supervision of their procurement. * Assist the General Manager in building financial objectives on an annual basis through the budget process. * Assist in meeting the financial targets in the sales area by executing and improving the annual marketing plan, reacting quickly to new opportunities, running consistently high operation standards, and effective utilization of marketing funds. * Help meet the budget in all areas of cost control with a consistent focus on the cost of sales and payroll. * Responsible for communicating with management, employee and accounting staff, identifying developed personnel and providing the necessary training as positions open. * All personnel should receive regular, timely and honest evaluations of their performance through the quarterly Kimpton Check-In. * Implement and conduct ongoing training programs for new and existing management and employee staff. * Responsibility for the daily cleanliness of the restaurant both internally and externally by coordinating kitchen cleanliness and service area maintenance with the GM and Chef. * Supervises all non-supervisory service employees. * Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. * Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and coaching employees; addressing complaints and resolving problems. What You Bring * 2 years of management experience in hospitality or similar industry. * Bachelor's degree in Hospitality, Restaurant, or Culinary Management is preferred. * Excellent interpersonal communication skills, problem-solving skills, and organizational ability. * Passion for creating and personalizing guest experiences. * Food Handler Certification (if applicable). * Flexible schedule, able to work evenings, weekends, and holidays when needed.
