The Director of Food and Beverage will provide leadership, strategic direction and lead in the overall revenue generation and growth for the food and beverage outlets; room service, banquets and inventory management and controls at the Depot complex. The position is responsible for ensuring the complex is poised to deliver exceptional quality, high margin, creative and innovative food and beverage offerings that exceed guest expectations, financial goals, hotel brand standards, effective management of assigned staff to ensure guest satisfaction and positive employee relations.

  • Achieves business revenue goals by developing and implementing service programs designed to increase guest satisfaction in all food and beverage outlets.

  • Uses expertise to develop and implement changes to food and beverage operations based on sales and guest comments; i.e. promotions, advertising, trends and capitalization of revenue opportunities.

  • Tracks return on investments.

  • Responsible for management of expenses to maximize hotel profitability.

  • Responsible for effective labor management through proper scheduling, monitoring, and adjusting based on business needs.

  • Follows CSM procurement guidelines and applies good business judgment.

  • Assists with the preparation and management of the department budget.

  • Manages and maintains company assets to stay within budget guidelines and prolong the life of company resources.

  • Accountable for guest satisfaction by ensuring food and beverage service standards are met and guests' needs are responded to in a timely manner.

  • Resolves guests' complaints in courteous and friendly manner, focuses on service recovery when applicable.

  • Works side by side with staff to train and model appropriate guest service standards.

  • Responsible for training all employees and ensuring training records are maintained.

  • Analyzes quality issues, identifies training needs and ensures implementation to improve results.

  • Utilizes available resources and adheres to CSM training policies.

  • Ensures all CSM, brand, and department specific training requirements are met.

  • Conduct routine inspections of food and beverage operations to maintain quality food, beverage and kitchen/restaurant standards per CSM, brand, local, state and federal regulations.

  • Ensures a clean and safe work environment, and follows all CSM procedures for guest/employee incidents.

  • Responsible for interviewing, hiring, coaching, and development of all employees.

  • Evaluates staff performance and takes appropriate corrective action as needed to hold employees accountable.

  • Motivates staff by setting goals, providing ongoing feedback, and rewarding/recognizing employees.

  • Responsible for effective self/workload management.

  • Demonstrates clear written and verbal communication skills.

  • Promotes collaboration and positive, professional work environment.

  • Attends all daily, weekly and/or monthly department/hotel meetings to ensure proper communication/planning occurs.

  • Adheres to all CSM Standard Operating Procedures.

Education:

High school diploma or GED required, college degree or equivalent experience preferred.

Experience/Knowledge/Skills/Abilities
10+ years of progressive food and beverage experience required, with 3-5 years of management/supervisory experience.

Must be detail oriented, have ability to communicate well with all levels within and outside the organization, and be able to problem-solve with employees and guests.

Must be able to manage multiple priorities in a fast-paced environment.

Ability to lift, push or pull up to 50 pounds on an occasional basis.

This position is responsible for ensuring all hotels within the portfolio are poised to deliver exceptional quality, high margin food and beverage offerings that exceed guest expectations, meet financial goals and hotel brand standards. ESSENTIAL DUTIES AND RESPONSIBILITIES * Menu Standards: Reviews and revises all menus in limited service and full service hotel restaurants on a semi-annual basis. Ensures all menu revisions meet CSM and brand specifications. Uses expertise to research, create and implement seasonal brand food and beverage programs on an on-going basis. Monitors and reviews food and beverage brand standards programs for extended stay/limited service hotels on an annual basis. Makes adjustments and implements any changes as necessary. * Cost Control: Works collaboratively with Regional Vice Presidents and to monitor cost controls in all food and beverage areas including purchasing, receiving and deploying of food and beverage goods. Monitors portfolio food and beverage costs and implement corrective actions for property specific issues. Responsible for overall accountability of expenses and optimizes profits by controlling food and liquor costs, production and labor to maximize profitability. Works with Food and Beverage Managers and General Managers to monitor china, glass and silver inventories at all hotels. Makes recommendations as necessary to ensure proper par levels at hotels. * Service Excellence: Conducts semiannual market surveys in all markets for hotels with banquet facilities to aid in the determination of future strategies. Adjusts menus as necessary to ensure market competitiveness. Monitors Food and Beverage service at all hotel properties and hires secret shoppers as necessary. Evaluates secret shopper reports and makes recommendations based on findings. Performs regular on-site inspections of Food and Beverage operations for evaluation, training and support. Monitors kitchen staff efficiency, food production, speed of execution and quality of product. Makes recommendations and works collaboratively with Food and Beverage Managers and General Manager to determine and implement proper service recovery strategy. Responsible for working with the Director of Learning and Development to implement training for all front of the house Food and Beverage associates. Ensures all CSM, brand and department specific training requirements are met and training is documented and retained. * Brand Standards: Ensure restaurant meets/exceeds company and brand standards resulting in increased guest satisfaction. Obtains flag specific brand standards food and beverage programs and modifies/adjusts as necessary to CSM standards. * Miscellaneous: Drives marketing efforts through all relevant channels, to include social media. Works in conjunction with Marketing Department to help develop universal marketing materials for Food and Beverage promotions. Stays current on issues and trends that may affect hotels. Creates communication tools to disseminate food and beverage data through the organization. Assumes the responsibility for recruiting, orienting and training food and beverage staff in pre-opening phase of new construction and acquisition of properties. Acts as resource for Food and Beverage professionals within the organization. * Self/Workload Management: Responsible for effective self/workload management. REQUIRED SKILLS AND EXPERIENCE Education/Experience: Bachelor's degree in Restaurant and Hospitality Management or equivalent experience. Knowledge/Skills/Abilities: * 10+ years of progressive food and beverage management experience * Must have senior level experience in back and front of the house operations, multi-property hotel experience and independent restaurant experience * Must be detail oriented, with strong self-organization and communication skills * ServSafe and TIPS certified preferred * Must have working knowledge of Microsoft Excel and Word PHYSICAL DEMANDS * Must be able to sit or stand at a desk for up to 8 hours per day. * Requires grasping, writing, standing, sitting, walking, repetitive motions, listening and hearing ability and visual acuity * Must have finger dexterity to be able to operate office equipment such as computers, printers, smart phones (i.e. Blackberry, iPhone), multi-line touch tone phone, filing cabinets, FAX machines, photocopiers, and other office equipment as needed * Ability to lift, push, and pull up to 50 pounds on an occasional basis TRAVEL: Up to 50% travel.
