The Senior Director of Culinary Services will help drive fresh ideas and perspectives to the Home Office Leadership, Executive Directors and Executive Chefs at Balfour. Helps keep company on leading edge of current trends and best practices within senior living and hospitality industry. Supports the successful preparation, delivery and presentation of the culinary experience at all Balfour communities. Will oversee and assist with new innovations and projects while utilizing current culinary trends. Supports the development, coaching and training of culinary teams and Executive Chefs. Oversees the design, creation and execution of programs and standards necessary to achieve a best-in-class dining experience while meeting all state and federal mandates.

ESSENTIAL JOB RESPONSIBILITIES:

  • Partners in the development and ensures implementation of standard operational procedures for dining services to achieve the desired experience by residents and guests.

  • Assists in the development and implements dining services training programs.

  • Supports the development of new menu's, menu cycles, and signature recipes.

  • Supports menu customization for residents who may have special dietetic requirements and related requests.

  • Reviews resident satisfaction with the dining program at assigned communities.

  • Supports the dining services budgeting process.

  • Trains community leadership and staff on core dining programs and standards.

  • Assists with implementation of dining services policies, procedures and performance standards.

  • Supports development and implementation of food service programs to meet/exceed annual dining services operating expenses and revenue goals.

  • Supports revenue creation with alternate dining options, a la carte menu, point of sale, and catering.

  • Assists with ensuring the required state and federal guidelines for diets, weight management, and healthy eating are in place.

  • Assists in planning and supports opening of new communities.

  • Assist Executive Directors in the sourcing, selection and onboarding of the dining services management staff and supports dining service staff hiring as needed.

  • Utilizes monthly Key Performance Indicators to determine cost management needs, revenue opportunities and leveraging best practices.

  • Supports the group purchasing effort and vendor relationships within culinary services.

  • Fills in and supports communities with vacancies in key culinary leadership positions.

  • Supports the sustainability, remodeling and renovation process for dining and culinary areas to ensure achievement of sales, revenue, and satisfaction goals.

  • Promotes company quality and service standards.

  • Performs other duties and tasks as assigned or required.

QUALIFICATIONS, KNOWLEDGE, & SKILLS REQUIRED:

College degree preferred.

A Culinary or Hospitality Degree required. Certified Dietary Manager (CDM) and/or Certified Executive Chef (CEC) a plus.

A degree in culinary or hospitality management or similar is preferred.

  • Must have a minimum of 7 years of experience in dining services management. Experience in senior living management preferred.

  • Experience in development and implementing culinary plans and strategies.

  • Serv-Safe certified or similar knowledge and certification for sanitation.

  • Proficiency with Microsoft Office and experience with menu and point of sales programs.

  • Must communicate effectively with individuals at all levels of the organization.

  • Possess patience, perseverance and strong follow-through skills to maintain the highest level of customer service.

  • Excellent at effectively managing time and priorities in line with objectives.

  • Innovative/able to think outside of the box when having difficulty recruiting for specific jobs.

  • Up to 30% travel.

QUALIFICATIONS, KNOWLEDGE, & SKILLS PREFERED:

  • Experience recruiting in a high-volume environment or in Senior Living/Hospitality preferred.

PHYSICAL REQUIREMENTS/WORKING CONDITIONS:

  • Travel is minimal.

  • Must be available to work weekends, evenings and holidays as needed.

  • May be exposed to unpleasant odors, contagious diseases and blood borne pathogens.

  • Balfour is a pet-friendly community; you may be exposed to animal hair and dander.
