Description of Job

The work unit exists to provide quality care to residents and meet or exceed standards prescribed by the Veterans Administration, and the Colorado Department of Public Health. This work unit exists to provide full dining services for 180 nursing home residents, catering, and staff meals. Responsible for three balanced, nutritious meals daily, meeting all dietary needs of all residents as per physician orders, meals are served on time, at the correct temperature, accurately maintaining diet cards, within state and federal regulations. Maintains a sanitary and safe work unit.

This position functions independently in performing a full range of responsibilities that include but are not limited to serving meals in the main and satellite kitchens, serving residents, cleaning, sanitation, and related tasks. This includes following generally accepted and facility food service standards. This position performs a variety of heavy manual labor food service duties, including, but not limited to cleaning and sanitizing the kitchen, the kitchen equipment, utensils, dishes, pots, and pans. The position requires heavy lifting, manual labor, and long periods of standing and walking (i.e. delivering the food hot boxes to the satellite kitchens). This position helps to stock and maintain par levels in the storeroom, coolers, and freezers and supervises the above-mentioned tasks and responsibilities in the absence of the Food Services Director.

Primary Duties include:

Sanitation:

  • Communicate immediately and directly with the Food Service Director about any department concerns.

  • Cleans dishes, pots, pans, tables and clears right of way before, during, and after meal service.

  • Main kitchen sanitation

  • Maintains all kitchen equipment according to set guidelines.

  • Follows kitchen and satellite daily and weekly cleaning checklist.

  • Cleans and sanitizes all kitchen food service equipment.

  • Cleans kitchen, equipment, and floors at the end of each shift.

  • Washes and sanitizes pots and pans.

  • Washes down walls, racks, and floors in walk-in refrigerators.

  • Collects and disposes of trash.

  • Maintains dumpster trash area.

  • Cleans dining room tables and sanitizes, cleans chairs, washes dishes and silverware, and puts them away.

Food Handling and Services:

  • Prepares all aspects of meals to food safety standards, visual appeal, and palatability for residents.

  • Follows standardized recipes.

  • Prepares enough of all menu items for residents.

  • Prepares enough therapeutic diets in the appropriate texture and temperature.

  • Follow the therapeutic worksheets for correct portion sizes and texture to include purées salad, desserts, and fruits to appropriate texture.

  • Serves regular and modified diets on satellite units to residents using proper procedures and resident tray cards.

  • Fills and delivers special orders to meet resident requests for alternative menu choices.

  • Prepares Salads.

  • Plates and serves deserts.

  • Communicates resident feedback regarding likes and dislikes to supervisor.

  • Delivers food and snacks to facility unit storage areas and refrigerators.

Monitoring:

  • Monitors all food temperatures and records on proper form while food is removed from the oven cooling unit and before the items leave the main kitchens.

  • Delivers foods as required to proper units.

  • Notifies on-duty supervisor any time foods are not at a proper serving temperature.

  • Provides solutions to aids for discrepancies in food temps.

  • Makes sure that every item is to the appropriate temperature to be served.

  • Monitors temperatures of the main kitchen, satellites, and other appropriate areas where food is served and maintains daily records.

  • Notifies on-duty supervisor any time refrigerators are not within acceptable parameters.

  • Check all leftover foods in refrigerators for expiration dates.

  • Check all storage areas for labels and dates.

  • Discards all outdated food and snacks as required by policies and procedures.

Education:

  • Attend scheduled in-services, trainings, and meetings.

  • Assists in training new employees on the functions of the job.

  • Provide feedback to the Food Service Manager on the proficiency of new employees.

MINIMUM QUALIFICATIONS:

Education and Experience:

One year experience in an occupational field related to the work assigned to the position (ie. Hospital or school cafeteria, institutional kitchen/cafeteria, or the food service industry)

Preferred Qualifications:

  • Possession of Food Certification(s)

  • Cooking Experience

  • Experience working in a long-term care environment

  • Ability to work effectively as a team member

  • Detail-Oriented

Conditions of Employment:

  • Full Background: CBI name check and fingerprint check, ICON Colorado court database, Medicare fraud database, Reference Checks, Professional License verification (licensure requirements), Drug Screen, CAPS (direct contact with adults - Mental Health Institutes, Regional Centers, Veterans Community Living Centers)

  • Must pass a TB test and other vaccinations required by the facility.

  • This position is considered "essential services" and you will be required to report without delay or interruption to provide essential or emergency services to ensure health, safety, and welfare.

  • Other: Must be able to be on feet for up to 8 hours continuously

  • This position has shift work: Day, Evening, Varying, Weekends, rotating, Holidays

  • Use, Handling, or Exposure to hazardous materials: Must be able to work around and with cleaning chemicals such as bleach, dishwasher detergent, oven cleaner, etc.

  • Former State employees who were disciplinarily terminated or resigned in lieu of termination must disclose the information on the application and provide an explanation as to why the prior termination or resignation should not disqualify the applicant from the current position. Absent extraordinary circumstances, prior disciplinary termination, or resignation in lieu of termination will disqualify the applicant from future State employment with CDHS.
