Dining Services Cook-Long Term Care (Skilled Nursing)


Prepares and serves nourishing and attractive meals and other foods as required to support the menu specific to diet orders and other center events.


1.Prepares meals items in accordance with menu production/preparation schedule. This also involves preparing and prepping foods needed for the next day.

2.Follow any and all standardized recipes and adhere to therapeutic restrictions.

3.Can identify safe hot and cold food temperatures for cooking, holding and storage.

4.Stores food with appropriate covering, labeling, dating at the appropriate temperature.

5.Follows guidelines for safe food handling and when preparing and serving food.

6.Monitors and records required temperatures of prepared items. Ensures that thermometer is in proper calibration prior to taking temperatures.

7.Monitors and records temperatures of coolers and freezers and records on temperature logs.

8.Pulls items needed for thawing 3 days in advance according to menu posted and follows HACCP guidelines.

9.Maintains a clean and sanitary work area. Follows cleaning log and any other assigned cleaning duties.

  1. Prepares and loads food carts in preparation of dinner no sooner than 45 minutes prior to dinner service (PM Cook).

  2. Prepares and loads food carts for delivery no later than 8:30am. Prepares staff lunches as ordered, Monday-Friday (AM Cook).

  3. Supervises Dining Services Department in absence of Dining Services Supervisor.

  4. Discards leftovers according to set policy and Health Department Guidelines.

  5. Works in a safety-conscious manner, which ensures that safe work practices are used in order not to pose a risk to self or others in the workplace.

  6. Any other job duties as directed by Dietary Supervisor.


  • Knowledge and practice of food safety to include but not limited to food handling, HACCP, prep, etc

  • Knowledge of kitchen equipment (Slicer, Mixer, Steamer, Food Processor, Ovens, Fryers, Flat Top Grill.).

  • Ability to read and follow menus and recipes.

  • Lifting 50 pounds maximum with frequent lifting and/or carrying of objects weighing up 25 pounds. Stooping, standing, walking, smelling, color vision, reaching, handling, and pushing.

  • Inside with exposure to heat, cold and wet conditions.

  • Ability to interact in a tactful, diplomatic, an humanistic manner with residents, families, visitors, and co-workers to provide a safe, efficient, and therapeutically effective caring environment which ensures the self-respect, personal dignity, rights and physical safety of each resident and center guest.



Education: High School Diploma or GED.

Licensure/Certification: ServSafe Certification Preferred but not required.

Experience: 6 Month to 1 Year experience in an institutional setting. Completion of a food handlers course preferred. (i.e.. Serv Safe).

Other responsibilities include cleaning the kitchen area and washing the dining/kitchenware in compliance with applicable food and sanitation codes. The Food Service Aide must also provide assistance to cooks during meal preparation when requested. All responsibilities will be conducted in a manner that is consistent with the assisted living philosophy. MAJOR WORK ACTIVITIES: 1. Delivers meals to pantries in accordance with the serving schedule. 2. Assists CNA with food service for lunch and dinner. 3. Ensures adequate supply of food and beverages are maintained in the serving pantries and break room. 4. Ensures supply of clean dishes, silverware and glasses are stocked in the serving pantries prior to meal service. 5. Maintains cleanliness of pantries including steamtables, coffee machines, juice machines and refrigerators. 6. Washes, dries and restocks pots, pans, plates, glasses and silverware according to proper methods of sanitation. 7. Cleans all kitchen surfaces and equipment. 8. Operates, disassembles, assembles, cleans and de-limes dishwasher. 9. Implements work standards, sanitation procedures, hygiene and safety standards in accordance with state and local code. 10. Maintains cleanliness of dry storage areas. 11. Demonstrates safe and proper techniques for chemical and cleaning solution use. 12. Maintains cleanliness of cooler and freezers. 13. Demonstrates knowledge of infection control techniques including cleaning, storage, and food handling. 14. Empties trash. 15. Sweeps and mops floors. 16.
